The first time I was every fully immersed into an episode of Raw was the night after King of the Ring 98, where Kane had won the WWF title from Stone Cold in a fist blood match, only because his costume covered his entire body.
WWF Champion - Kane, who lost it right back to Stone Cold that night Intercontinental Champion - The Rock Tag Team Champions - The New Age Outlaws Light Heavyweight Champion - Taka Michinoku European Champion - Triple H

WWE: Sycho Sid Intercontinental: Hunter Hearst Helmsley Tag Team: Owen Hart & The British Bulldog
I'm just using Survivor Series 1996, because that's the first PPV I can remember watching at 4 years old. I know I watched before, because I remember 123 Kid, Isaac Yankem, Mable, Goldust's debut etc. But I'll just count SS '96.

I watched sparringly before this but my earliest real memory was Jericho as Undisputed Champion 9 years ago, aged 8.
Undisputed - Chris Jericho Intercontinental - Edge European - Christian Tag Team - The Dudley Boyz Hardcore - The Undertaker [Won the day Jericho won the strap at Vengeance] Women's - Trish Stratus
Not a bad line up if you ask me :-)

Wrestlemania 2 was my first introduction to WWF. So the Hogan was the WWF Champ. Savage was IC Champ. Beefcake and Valentine started as Tag Champs but lost to the British Bulldogs that night.
Oh and Moolah was Women's Champion.

I remember the first title change I saw was on Raw: Austin/HBK vs Bulldog/Owen (c). that reminds me of how even though I was already 'smart' to the business after I first watched that SmackDown and had looked up all sorts of info on wrestling, I still didn't know what to expect when it came to title matches. I thought Road Dogg really had a 50/50 chance of winning the IC Title and that maybe, just maybe, they would give Val Venis the WWF Title in his match against The Rock.
