Haven't seen a whole lot, but have seen some. I personally really liked Edge's, and he's also my favourite wrestler. HHH's is my current favourite, as it was so intriguing, even my brother who doesn't like wrestling loved it. Still trying to get the Punk one, the trailer looks great.

off the top of my head?
Stone Cold Bret Hart HBK The Monday Night Wars(one sided but a fun watch) Rise and Fall of ECW Ric Flair & The Four Horsemen Road Warriors Edge
and I want a full Sting Docu so badly from WWE too.

Punks went above and beyond. It literally covered everything outside of new nexus (who's complaining?). Sure they didn't spend more then a few minutes on each topic but that's been the standard with the more recent WWE Docs.

Surprised more people haven't said Bret Hart's. It was absolutely fantastic.

I'd say for a superstar one either Randy Orton's or CM Punk's
For a promotion or era in wrestling the Rise and Fall of ECW.

Triple H set the bar for me as it's really one of the best doc.
Punk is also awesome even if he comes off self-righteous. Edge Bret's doc

The Self Destruction Of The Ultimate Warrior. Despite the DVD being an attempt purely at taking the **** out of Warrior, since it was the first time I had ever watched wrestling, it not only got me interested in pro wrestling, but The Ultimate Warrior has remained my favourite wrestler to this day.

My favorites;
Rise and Fall of WCW The Monday Night Wars CM Punk
Biggest Disappointment:
The Attitude Era - I just watched this again the other night - it doesn't really offer any insight or interesting information..... very dull, and a poor representation of the actual time period, in my opinion...
History of WWE - I just felt like this just isn't quite what it should have been - it doesn't truly represent WWE's complete history the way it could have.

Punk is by far my favorite, with Foley's being a close 2nd

It's between Punk and HBK's for me as my absolute favorite. Jericho, Foley and Triple H, all great imo.
