For me it has to be Hunchback of Notre Dame. The music is memorable, outside of the funny and cheerful it is rather somber. The intro inspires goosebumps, the reprised "Hellfire" version of the intro motif in the middle is stunning and very, very mature subject matter for a Disney G rating.
I would place Fox and the Hound and Robin Hood up there despite not being music driven vehicles, at least not on the scope of the late 80's and 90's era.

Atlantis The Lost Empire by James Newton Howard. I don't own the CD but James Newton Howard is one of the best composers out there. A Goofy Movie soundtrack is up there too

Although it's not technically a Disney Movie even though Disney owns thedistribution rights to it The Brave Little Toaster soundtrack by David Newman and songs by Van Dyke Parks is one of the best soundtracks to an animated film. It got a limited edition CD release by the now defunct Percepto Records. It is one of my favorite Film Scores

I have to agree with the OP, The Hunchback of Notre Dame is the only one that I can listen to from beginning-to-end & enjoy the whole thing....

Frozen Lion King I don't care what anyone says, Frozen is awesome I watched Frozen and thought it was alright, I really didn't see the fascination with it though. Obviously I'm a 23 year old man so maybe that was it, but I can't help but think Tangled was a far better film and that if I was a 12 year old girl THAT would be the movie that I'd love.

When Tangled came out, I was still thinking "Princess movies are bad lol wtf is that?" I'll need to rewatch Tangled again soon.

Snow White. People will be singing "Hi-ho" for the next millennium. And "Someday My Prince Will Come" still might be the best song Disney ever wrote.
