His purple glove look was my favorite, especially when he added the face mask. In terms of actual run though, SummerSlam 96ish through like Judgement Day 98 was my favorite run of his career. Mankind, HBK, Kane and Austin. So much good stuff, including what I consider to be the greatest match of all time at IYHBB in the Cell.

Ministry Taker from '99. First time I watched Pro Wrestling. He creeped me the f*ck out. That version of Taker was very dark, as a little kid, really scared me.

2000-2001 ABA. I'll take an Undertaker that doesn't take his gimmick too seriously and can cut promos or interact with other wrestlers verbally.

The biker version. It didn't have all the stupid "DIE DIE DIE I AM THE MAGICAL POWER ZOMBIE MASTER I AM STEALING YOUR SOULLLLL" nonsense that he used before or after. And it didn't include eyeliner.
Occasionally in the last few years, he's done the grizzled vet thing now and again and it has been great. But then he'll go back and do the spooky BS again and I lose interest.

The whole voodoo magical powers with the Undertaker just never connected with me. That being said, I loved the realness and rawness of Big Evil. That character fit that time period so well. Nothing was cooler than this incredibly intimidating mammoth of a man roll down the ramp on a Harley to Limp Bizkit. His WMXIX entrance is still my favorite. Limp Bizkit haters will be quick to hate on me, but its whatever.

One of the main issues with the ABA is that he had some of his worst ever storylines during that run. Sara's stalker, hardcore champion, Vinces bitch, supposed affair with another woman.
Biker Taker was like unmasked Kane, they took two great characters and did utter crap with them.

Ministry 'Taker was the time he had the most "character" and it was some of his best work in the gimmick.
But my 2nd favorite would be the gimmick where he wrestled 5 star matches against HBK, HHH, etc. with the Wrestlemania streak on the line
ABA was ok at the time, but it's extremely overrated.

He had the best matches of his career from 2004-2012. My vote is for his return to the Deadman.

While his time as a biker was probably my least favorite Undertaker gimmick, it was a necessary evolution at the time. In the end, it allowed him to become an overall better performer/worker.
