Anybody else like this snack? I don't know many people that eat these as they aren't sold in too many places in Ireland but I absolutely love them, I'd assume they are more popular in the states and the UK.

Not a fan, but they're very popular in the southern parts of the U.S.
But hearing them referred to as "pork scratchings" nearly made me puke. Almost as bad as "pork scabs".

If I’m making nachos sometimes I sub out tortilla chips for pork rinds.

These are standard snacks in Mexico. They are called Chicharrones. Typically on Mexican streets you can buy a chicharron, they're usually the size of an Elite figure box and about 1/3 the thickness. You can get them plain but most people get them with salsa on them.
In the USA most Pork Rinds are sold in bags, just like potato chips and are cut into pieces that are the same size as potato chips. They're usually bagged plain or bbq flavor or spicy flavor. Some Mexican businesses sell the bigger Chicharrones but usually they don't have the same style salsa that you get in Mexico.
There's also Chicarrones estilo Michoacan. Those are just like Pork Grinds but they have pork meat on them still.
And then there's Chicharrones de harina. Those are crunchy snacks. You can eat them just like a pork grind but they aren't pork, they're flour. You can call them vegetarian pork grinds.

I like them fresh. But the ones you buy at the store are always stale and not very good.

Love them, especially the salt and vinegar ones!
Toms and Uncle rays brands are the best

You can usually find them at fairs, festivals, or tourist places in the south. My in-laws make them fresh a lot. Sometimes they sell them too. It's pretty easy to do.

Sweet Heat Pork rinds are the way to go. Anyone from the South knows what's up with Golden Flake.

Cracklins are ing great when they're fresh. They're pretty much pork rinds but with some meat still on them.
