I was lucky enough to be in attendance for both Kurt Angle vs. Chris Benoit at Royal Rumble 2003 (not the actual main event, but a main event title match), and the Benoit/Michaels/Triple H title match at Wrestlemania XX. Both were absolutely unbelievable to witness in person.
I've been to a lot of shows over the last several years, including Wrestlemania 33, but none have really lived up to either of those matches. I think the closest thing would probably be the DIY/Revival/AOP match at Takeover: Orlando.

Almas vs. Gargano by FAR.
I’ve seen some other great stuff but a lot of shows I have been too had a lackluster main event. That one delivered in a way I’m not sure I’ve ever experienced Indy or WWE.

DIY vs AOP in the ladder match at Takeover Chicago Brock vs Cena at Extreme Rules 2012 Tyler Bate vs Pete Dunne at Takeover Chicago (even though it wasn’t the event).

In terms of match quality, HBK versus The Undertaker from Wrestlemania 25. Big match atmosphere. Two of the greatest of all-time. Insane crowd. That match is perfect.
In terms of "OMG I was there!!!," Survivor Series 2002 when Shawn won the first Elimination Chamber. From retirement a few months earlier to winning the title at Madison Square Garden. He'd go on to wrestle for another eight years, but he'd never again hold the belt. That one was really special.
Honorable mentions to my first ever ROH show (possibly even my first Indy event?). Final Battle 2005. KENTA versus Low-Ki. That match was just out of this world and really opened my eyes to wrestling outside of WWE. To think that show also featured Daniel Bryan, Samoa Joe and Cesaro.

I guess I'll go with Batista vs Edge from 2008 as my favourite.

Probably in 2003.
Shawn Michaels and Booker T vs. Ric Flair and Randy Orton.
Just a fun tag match. Went about 15-18 minutes. Lots of near falls.
2002 - Austin vs. Guerrero, 2009 Punk vs. Taker Dark Match, 2003 - Street Fight with Shane McMahon and several others. Test broke his ankle in this match and wore a cast on Raw the next week.

John Cena vs Shawn Michaels on Raw from Earls Court, England. I was ringside for this, and it was just a couple of weeks after their Main Event at Wrestlemania 23. It went on for 57 minutes. It was pretty mad at the time considering Randy Orton vs Edge was also advertised for that night, so everybody was under the impression it was still to come, but the John Cena vs HBK Match just kept on going which made it all the more surprising and better.
I also saw Triple H vs Randy Orton in a Street Fight on a London Raw Taping just a few weeks following their tragic Wrestlemania 25 Main Event, which wasn't necessarily great but was memorable as it was my first Live Show that I had been front row Ringside for.
Rey Mysterio vs Kurt Angle for the World Heavyweight Championship on a Smackdown Taping following Wrestlemania 22 was pretty good, especially as I was a huge Angle fan and he was at his peak.
Shawn Michaels vs JBL in a Raw vs Smackdown Interpromotional Lumberjack Match at a Raw Taping from Sheffield, England, days before Survivor Series 2005 was a lot of fun at the time too. It was still a pretty big deal to see Smackdown Superstars show up on Raw and vice versa at that time, despite it being such a rinsed formula, but it was really entertaining and surprising. It was just a week after Eddie Guerrero had passed away too, and there were a lot of special tributes still.

Have had a lot of dud Main Events over the years though especially being in the UK, the likes of John Cena vs Lord Tensai, Kane vs Big Show, Undertaker & Batista vs Finlay & Mr Kennedy, Undertaker & Kane vs John Morrison & The Miz, Triple H vs JBL, and worst of all Randy Orton, R-Truth, Daniel Bryan, Mark Henry & The Miz v. Nexus.

Edge Vs Brock Lesnar for the title in 2002. Possibly one of the best matches I have ever seen live and Edge had so many close calls.

Rollins vs Ambrose for the WWE title on Raw two summers ago. The one where it ended with a double pin and Ambrose retained a day before the Draft. As far as Indy shows go, I’ve seen Hardy Boyz vs Young Bucks which was awesome.

AJ Styles vs. Bobby Roode for the TNA World Championship at an Orlando Impact taping (2012):
Roode breaks AJ's record for the longest TNA world title reign. (Sting made a dramatic return after the match!)

it was only at a live show, I've never been to a taping, but Kurt Angle vs Undertaker. Ended with Taker in a triangle choke pin/submittion ending, it was so intense a fan jumped the rail. In all fairness to security the jumpers feet didnt even hit the floor on the other side.

Almas vs Gargano, hands down. The entire TakeOver Philly event was awesome and I got upgraded to floor seats, but that match was one of the best I’ve seen. They’re both fantastic

Vengeance 2002: Rock vs. Angle vs. Undertaker for the Undisputed Championship.
Really fun match. Defintely worth a view on the WWE Network.
Rock vs Cena at WM 28 is a close second, mostly because we were so shocked and elated that Rock won the match that we were jumping up and down with what seemed like the rest of the crowd for at least 20 seconds.

In terms of actually main events of a show closing match up the two that pop to mind are John Cena Vs. JBL for the WWE Title in a "I Quit" match at Judgment Day '05 and then a house show world title match up between Chris Benoit and Triple H back in '04.
In terms of matches I've seen I would go with The Shield Vs. The Wyatt Family at Elimination Chamber '14 and Daniel Bryan Vs. Dolph Ziggler at Bragging Rights 2010.

One of my first wrestling shows ever was in Trenton NJ featured HHHs in ring return from injury. It was the night before his massive 2002 MSG return from the quad injury. It was him and Kane vs Angle and Jericho. Craziest crowd I can ever remember, I was so young I couldn't see a damn thing due to all the adults jumping and freaking out in front of me.
The 2004 Royal Rumble match in Philly
Randy Orton and Chris Benoit wrestled at a house show in Trenton NJ a week or so before Summerslam 04. I was such a big Orton fan back then and I remember me and my brother going crazy cheering for him all match, after he lost he gave our section a wink after he lost, almost like he was saying "wait until Sunday"
CM Punk vs Cena at NOC 2012 Great match and I had awesome seats like 4th row on the floor.
MITB 2014 where Rollins won the briefcase
and Hopefully I can add to this list after Mania 35
