Mine has to be Chuck vs Rashad , Goldberg and Rogan's reaction to Chuck getting knocked out was fukking hilarious lol I watched that fight so many times i can countdown till when Chuck gets hit

Guida/Griffin from UFC 72. That's the fight that got me interested in MMA as it contained back and forth wrestling and some sub attempts instead of a Liddel style slug fests which is all I had seen up until then.

Of all time. I'd have to say Randy spanking Tito way back at UFC 44 or whatever it was.
Of more recent fights, I'd have to say Brock getting redemption on Mir.

The first fight that came to kind was Hughes/ Trigg 2
For pure excitement despite being a short match it don't get a lot better than that.

Silva vs. Franklin II is a real high point for me. It basically got me into MMA and solidified Anderson Silva as my favorite fighter.
I'm also a huge, huge fan of the Leonard Garcia vs. Roger Huerta fight.

Even though I'm a huge Chuck Liddell fan, there's no denying that Liddell vs. Jardine is a great fight.
Couture vs. Gonzaga and Couture vs. Coleman are great for me, being a huge Couture fan.
Keith Jardine vs. Wilson Gouveia is a sweet fight, too. As is Forrest vs. Rampage.

Ortiz vs Griffin 1 was pretty good IMO. One of the first fights I'd ever seen, and a good one to start off with. Had great striking, ground work, escapes, and a great comeback.

Nelson vs. Struve- Nelson is one of my favorite fighters and I loved the fight even though it was short as hell

Chris Leben V.S. Terry Martin (Leben is one of my favorite fighters and I thought he was going to lose when he was against the cage, until he came back and knocked out Martin)
Mir V.S. Kongo (Mir another favorite, dominated Kongo pretty quickly)
There are so many fighters that I like, it's hard to narrow down fights.
