I can't possibly pick one favorite, but here's a great one: The Midnight Express vs. the Fantastics from Clash of Champions I.
Everybody talks about Sting vs. Ric Flair from that show (rightfully so), but the Midnights vs. Fantastics match had incredible heat. Highly entertaining.

There are way too many to mention from the late 80's. If I had to pick one from the later years it would be Bret Hart vs. Chris Benoit, the Owen tribute match on Nitro from '99.

I can't name anything that hasn'tm been mentioned but I enjoyed Ultimo Dragon vs. Dean Malenko from Starrcade 96, shitty ending but apart from that great match.

Hmm... I don't really have all-time favourites, but I got current favourites:
I really enjoyed the Flair v. Steamboat match they had on WCW Saturday Night in 1994. It's lesser known in the context of their many matches, but it's a good one just the same.
I just watched Halloween Havoc 1990 the other night and there were two good tag matches on the show: the opener between Ricky Morton and Tommy Rich and the Midnight Express as well as the Steiners vs. the Nasty Boys. Both of them hold up pretty well to today's standards.
And besides the Steiners vs. MVC match from Beach Blast 1992 that's already been mentioned, I thought Rick Rude vs. Steamboat in the Iron Man Challenge was a tremendous bout.

Ric Flair vs. Ricky Steamboat, 2 out of 3 falls match, Clash of Champs 6. Almost 60 full minutes of back-and-forth wrestling. I still think it is the best match of both men's careers as well.
