Mine is Starrcade 98. The Triangle match rocked! You?

World War 3. It was amusing to see main eventers and jobbers in the same ring...or rings.
Plus, the 60-man battle royal was a chaotic match. It was a concept match that was good on paper, but didn't work on live TV.

Starrcade 95 with WCW vs. NJPW was a great one even if some of the matches were watered down versions of the matches they had in Japan. Almost all of the Halloween Havocs were great with Spin the Wheel, Make the Deal.
Actually I would say I enjoyed almost all of the NWA/WCW PPVs starting in 1985 up to somewhere in 1997 or 1998 when they stopped having endings, which was also happening on Nitro, and would end with "Sorry fans,we're out of time".
To Hollywood Hexus I have to ask if you actually watched them when they aired or did you form your opinion from watching them on tape or DVD. Maybe it's different having watched the PPV live after watching the build up from week to week at a time than someone, years later, just watching the PPV with no build up.

I really enjoyed Halloween Havoc 97, and Starrcade 97. Rey Mysterio vs. Eddy Guerrero was great from HH97, and although the match it's self between Hogan and Sting I didn't feel lived up to the hype, it was still a decent match, and plus the commercials for Starrcade were bad ass.
