Rick Martel was a spectacular wrestler. I just wish he wouldn't have been stuck with the Model gimmick because I feel it really watered down his move set as he was forced to get over the character rather than his in-ring work.

I think that back in the day, Marty Janetty, Owen Hart, and Luna Vachon were very underrated. Shawn's popularity overshadowed Marty's. The same case scenario with Owen and Bret.
Luna experienced a lot of fan hate during her days, being told she sucked and even having objects thrown at her. I think she was a real heel wrestler, who didn't want to look all cute and happy.
Nowadays, I think that Charlie Haas, Michelle McCool, and Kenny Dykstra are the most underrated stars. Charlie, in my opinion, is much less popular then Shelton Benjamin. Charlie doesn't have the charisma and mic skills like Shelton, but I think he is a great in ring competitor who's looked at as an unpopular loser because of his low charisma.
Michelle McCool is one of the few divas who did the diva search who actually wanted to learn to wrestle (others include winners Ashley and Christy Hemme), instead of being a piece of eye candy. I think she's extremely athletic, and should be moved to Raw. I think her moveset shows a wide variety, and I think she could be a future Woman's Champion.
When I think of Kenny Dykstra, I think of "cheerleader". I think his stint with the Spirit Squad really took a toll on his career, and people don't look at his wrestling ability. I personally see him as one of the next big things in the company. Who would of thought that Batista would be big when he debuted as a bodyguard to D-Von Dudley? With Kenny being the only one of the Spirit Squad to remain on the main roster after the split, I think he'll go a long way.
