It's a toss up between the Hardy Boyz Leap of Faith dvd or the History of the Intercontinental Title dvd.

Wrestling Road Diaries starring Colt Cabana & Bryan Danielson. I've never seen this It's worth checking out, especially if you're a Daniel Bryan fan. Colt sells the dvd and digital copy on his website. ColtMerch.com

Probably Eddie Guerrero: Cheating Death, Stealing Life. I used to watch that all the time.

Either Mick Foley: Hard Knocks and Cheap Pops, Best of Raw Vol 1 and 2 (the DVD from 2001), or the Self-Destruction of the Ultimate Warrior.

Ric Flairs first 3 disc set.....
I cant watch any of them anymore...the piped in stock music is embarassingly bad....ruined the Rise and Fall of ECW for me...that and its revisionist history.

I got the first Ric Flair set, "The Ultimate Ric Flair Collection" for Christmas 2002(if I'm not mistaken) and watched it religiously for a long ass time. At 10.5 hours, it has to be one of the longest and and most in depth of any WWE DVD, absolutely packed with extras.
Nowadays, I'd say my most watched and favorite DVDs are Money in the Bank 2011 and TLC 2011. Without a doubt, two of the best Pay Per Views in the history of wrestling IMO.

Rise and Fall of WCW. I see Punks taking that honor away though.

Documentary? The WCCW and ECW DVDs. I've seen both about a dozen times.
Wrestling compilation? Macho Mans.
PPV? Probably Mania 22. I was there so I like to watch it a couple times a year for fun.

WWE: Greatest Rivalries - Shawn Michaels vs. Bret Hart If no one has seen this yet its really good to hear from both guys and hear about stuff you didnt know. And if we are going old school i watch the best of Raven matches from ECW on VHS.

I watch alot of Bret v. Shawn DVD, the Monday Night War DVD and also, just for matches, I watch the original DX dvd that was re-released in DVD form because it features some cool matches such as HBK v. Mankind from Raw 97 and the tag match against Taker & Mankind.

There's too many to name for me. But if I had to pick one, probably The Rise and Fall of ECW.
Some of the WCW dvd's are really good too though.
