Maddox is desperate to be famous so what if he challenges the man that makes people famous and decides that he wants to do the impossible and end the streak.
If Taker can't wrestle a full match a squash one against Maddox would be perfect and could possible get Maddox over aswell.

I think it'd be better as an unadvertised surprise squash, or even non-match. Just Maddox cutting a promo calling him out, Taker appears and tombstones him. If the Deadman can't do a full match, something with Maddox would be fun.

If we're just going to be throwing people in there for potential WM Taker opponents, I'd like to throw my hat in the ring. I went through pro wrestling training. I can work a match if I have too. I could even pull off the Vader moonsault as an athletic fat guy. That's entertaining!
And hey, I know how to use Youtube and twitter! WWE would eat it up!

No one would take the match serious and I highly doubt Undertaker would do it. No offense to Maddox because I'm a fan, but it'd be a joke of a match.
