The Little Big Planet & Ratchet And Clank series are probably tops. Also can't really go wrong with any of the LEGO games. And if you haven't already played them on PS2, check out the HD collections for Jak & Daxter and Sly Cooper.

I thought rachet and clank on ps2 were great games, but on ps3 I found them to be very easy.
Same with hitman great on ps2, very easy and lost its charm on ps3.

Never was much for the Hitman games myself, but did find Ratchet & Clank was about the same difficulty on PS3 vs the PS2 games. Of course, I kinda suck at pretty much everything, video games included, so... LOL.
Seems that a great deal of platform type games these days are a good bit easier than the ones made years ago in the SNES and Genesis era. Probably because video games, in general, are far more popular today than they were then, so game creators have to cater to a wider audience and catering to a wider audience means you can't make a game super hard because that's likely to turn off a large number of gamers who won't buy the next game in the series if they found the last one to be way to hard to complete.
