Sting. One of my favorite figures EVER Razor. He really pops on the shelf Macho Man. Sadly I don't own this figure, but it's epic. Steamboat is highly underrated. The Rock looks great with all of his accessories on. Hitman is all around an awesome figure. Flair looks amazing Hogan is Hogan. First Hogan Mattel, and it looks damn good. Taker I think is underrated. He looks great HBK's headscan is off, but I love the attire and match it's based on. Warrior has great detail, but something throws me off (headscan?) Stone Cold. Not too special Cena. See above HHH. I absolutely HATE his headscan.

Going off the 5 I own. Very tough list to do..each one that is ranked higher is just by barely.
1. Sting - Excellent figure. Great detail and unique sculpts. Plus awesome jacket. 2. Bret Hart - Another excellent figure it was a tough choice between him and Sting. Came with great accessories. 3. Ric Flair - The figure that brought back DM. Love the robe and its a great figure. 4. Razor Ramon - I love this figure. Really hope we get a green one. But I was so happy with purple choice. 5. Hulk Hogan - Another great figure. Would have been cool to included an extra shirt that didn't have the open slit down the middle.
The only other defining moment figures I wish I grabbed are:

I can't rank them in any particular order besides Sting because he's my favorite wrestler so my answer would be a little biased. Here's my list-
Sting Bret hart Macho Man Ultimate Warrior Flair, but I hate the torso choice. The rest I don't care for...

Top 3: Macho Man: Every detail is perfect and the moment they chose was easily one of the best in Savage's career.
Hogan: To me this is the definitive 80s Hulkster figure. The belt is an awesome accessory and the only ding I can give it is the rubber shirt. Macho got cloth, Cena got cloth, even Sting got it, but they could have done what Jakks did with their CS Hogan. Cloth with velcro.
Triple H: This is one DM that I'm still trying to get a hold of. The all cloth attire sold it to me, even if it looks a little bulky, and the moment they chose to recapture here was phenomenal.
Bottom 3:
Ricky The Dragon Steamboat: The figure itself is fine, well worthy of the premium price, but the moment here I think was BSed simply to justify the position for an otherwise excellent figure.
Shawn Michaels: Why they decided to go with WM25 Michaels is beyond me. Again, I can't ding on the figure too much, but if they were to do one DM Michaels, why not WM 12? I felt that would have been a better choice, even if it's just an elite version of his Entrance Greats figure and reuse the entrance gear.
The Rock: As much as I'm a fan of The Great One, this figure really doesn't stand out compared to his other elite flashback outings, Rock 'n' Sock jacket notwithstanding. Maybe if they switched out the jacket for the Attitude Era title and use either winning the Survivor Series '98 tournament or his loss to Mankind sealing the deal for WWE winning the Monday Night Wars would have been a better move IMO.
Special mention goes to John Cena, seeing as this was one defining moment I actually saw live in middle school, so even though he's squarely in the middle for me, he gets brownie points for being a moment I actually saw on TV the moment it happened.

Ricky Steamboat (not sure what the defining moment is here) 11. HBK (saw thismatch in person so I like this figure even though the scan isnt very great) 12. Undertaker (saw this match in person too but I never liked this look for him) 12. John Cena (shouldve came with a Patrick Ewing jersey lol) Wouldve shot to the 2 spot for that 13. Triple H 14. The Rock

I only own three sadly but off the ones I have its sting,hogan and then razor. Hoping to pick up ric and the upcoming taker as I missed the sdcc one. Wouldn't mind get some of the older ones but they will have to wait a while lol

Sting - pretty flawless.
Hulk Hogan - as above, but it isn't my fave look of the Hulkster.
Ric Flair - wooooooo
Undertaker 1999 - loses points for being basically a rerelease, but it's a truly outstanding figure.
Ricky Steamboat - absolutely phenomenal looking.
Ultimate Warrior - looks great but has the wrong hair for that night.
Undertaker 1996 - perfect apart from skintone. Taker was ghost-white that night, the figure has been sunbathing for a month.
John Cena - good figure, decent accessories. One of the few figures at this scale where the cloth accessories aren't awful.
Stone Cold/The Rock - both fine, just unremarkable.
Macho Man - bad headsculpt, missing the vest thing.
Shawn Michaels - he wasn't clean-shaven at WM25, nor was he ginger. Good accessories though and his ring gear is perfectly captured.
Bret Hart - headsculpt isn't perfect, the jacket and flag suck, but the wrestling gear looks good.
Razor Ramon - just a bad figure. The headsculpt isn't great, the body is poorly-chosen, and it doesn't justify the DM treatment. It's also not based on a Defining Moment.
Triple H - the headsculpt is bad. The clothes, especially the "jeans", are the worst thing to ever come from a wrestling figure line.

Savage and steamboat are pretty well the only two I feel are worth the defining moments price tag
The rest could have gotten away with an elite release
I only wish savage came with his shirt as well
