How do you guys remove it to switch figures at the knee and put it back in I can't get it out?

get it hot, boil it or use a hair dryer
makes the plastic much easier to manage.

Heat it up long enough and it should easily pry apart and then you can just pull the peg out. A pair of pliers is what I use to pop it back in completely.
