Solo career...
Arn Anderson vs. Bobby Eaton from SuperBrawl in 1991 comes to mind right off the bat.
Actually, if anyone has the old WCW World Wide, Main Event, Pro, Power Hour, Saturday Night shows from 1991, go back and watch all the matches these two had on TV. Amazing stuff. So I wasn't shocked how well they worked as a tag team in 1992.
Arn Anderson vs. Ric Flair at Fall Brawl 95.
We got to see the one time only that these two men would have a one on one match with each other.
Arn with Flair/Roma vs. the Hollywood Blondes in 1993 as well made for some great matches.

The Enforcer carried Tom Zenk to the best matches he had during his solo run. Going back to Arn's early days in JCP, Arn had a pretty hard hitting feud with Manny Fernandez that tends to get overlooked. While I wouldn't put those up there as Arn's "best" work, they deserve mention as a testament to how well he could work with a variety of opponents. Also his run with Ole against the RnR's was very good as well.

I wouldn't say it was his best, but I personally liked it- match vs Big Josh from WCW Saturday Night in 1992.
Nobody did a better Spinebuster than Double A. NOBODY.
