Face side- Boss Man in early 1990, Andre at WM VI, Larry Z leaving the Dangerous Alliance, Jimmy Snuka WWF circa 1982,Piper heading into WM III(Very well done transition),Buddy Rose in Portland circa 1983,Raven coming back to ECW in 99 and winning the belts with Dreamer,Flair circa 89 feud with Funk
Heel side- Martel WM V,Jerry Lawler in Memphis 1979,Road Warriors turning on Dusty NWA 1988,,Austin Idol attacking Lawler in 1987,Paul Bearer turning on Taker SSlam 96( shocking and well done)

Shane Douglas in ECW in 1993. He was always seen as a baby face or "Ricky Steamboat's partner" and he ends up becoming the Franchise of ECW in both gimmick and reality, and wins the ECW Title numerous times. That heel turn saved his career.
British Bulldog's heel turn in the WWF in 1995. Nobody ever expected Davey Boy to go heel, and he did so on Diesel in that tag match against Men On A Mission, and it got him five WWF Title matches in the next 10 months.
Brian Pillman's heel turn in WCW in 1992. It wasn't anything special, they just turned him because Brad Armstrong won the Light Heavyweight Title, and then because of that we ended up with Pillman & Austin as the Hollywood Blondes in 1993.
Johnny B. Badd's face turn in WCW in 1992. He was a heel with Teddy Long as his manager in 1991, and it just didn't seem to work. Once he turned face, he ended up winning big matches, and became a three time WCW TV Champion.
Mr. Perfect's face turn in WWF in 1992. It made Curt Hennig return to the ring, and have a second life to his career at that time which seemed over with.
Balls Mahoney face turn in ECW in 1997. Balls was kind of on that line of 'is he a heel, or is he a face' because of who he wrestled. But it was a full face turn in 1997 where Balls Mahoney got over with the ECW crowd, and the chair swinging freak ended up winning three ECW Tag Titles and was super over with the crowd.

Amazing how Shane completely turned his career around once he joined ECW. Bulldogs turn really did come out of nowhere and was nicely done. Pillman's heel turn was great just for reasons of the forming of the Blonds like you said. Badd as heel just didn't work so yeah way better as a babyface. Big props to Vince and co for quickly turning Perfect on short notice and in well done fashion. Loved that angle on PTW. And yeah Balls Mahoney. Who knew he would go from Xanta Klaus in the WWF to being super over as a chair swinging freak in ECW.

Faces: Bret Hart/Hart Foundation WM IV. Virgil in 91.
I wasnt watching yet in 87 but Beefcake's turn at WM III seemed odd. It kind of seemed like Dream Team adding Bravo was going to lead to a turn on him but it seemed strange to me watching it. Plus cutting someone's hair being a catalyst seemed odd too.
Heels: Power and Glory joining forces against the Rockers, Tugboat becoming Typhoon, Jake Robert's turning on the Warrior is probably my favorite turn ever.
Worst heel turn ever goes to Demolition post WM VI.

It kind of seemed like Dream Team adding Bravo was going to lead to a turn on him but it seemed strange to me watching it. Plus cutting someone's hair being a catalyst seemed odd too. The worst part of the turn is it literally came out of nowhere. Honorable mentioning here goes to two men, who maybe weren't underrated, but two of the greatest turns at that time frame for NWA/WCW history.
Lex Luger's face turn at the end of 1987.
You would think being a Horsemen would be all you wanted as a pro wrestler in the NWA, but Lex proved that even though he had the look to be in the Horsemen, that he was much suited to be wrestling against them. So the face turn Lex did, enabling him and Windham and Sting and Rhodes to go after Arn, Tully and Flair was amazing.
With that being said....
Barry Windham's heel turn.
Not only did Barry give up the fans, he gave up one half of the NWA Tag Titles that he and Lex were holding, to drop them back to the Horsemen, only to join the Horsemen and end up being the US Champion for 7 or 8 months. Then we got a Barry vs. Lex feud in 1989 because of it. Just amazing stuff!

Yeah with Vince securing LOD, Demo was just kicked to the curb and that's a shame.
As far as the turn yeah it did come out of nowhere for sure.One week they were getting cheered, next week they were on the interview platform cutting a heel promo.

One I don’t remember how it happened was Muraco’s face turn. It’s funny because I was always a huge Muraco fan, but I don’t remember what caused his face turn.

Yeah as far as TV goes that really cemented it but he did briefly feud with Orton prior to that.
I do recall him having a few babyface promos before he helped out Graham as well.

HHH's turn @ WM15 is criminally underrated.
Absolutely NOBODY seen it coming after Chyna defected back to DX from the Corp Team earlier in the night. Chyna's turn threw everyone off the scent completely...He was probably the 2nd most over huy on the roster after Austin & his heel turn would lead to one of the greatest runs any wrestler has ever had from April 99 right through to him tearing his quad in 2001.
It was so well executed....
Undertaker in 1998:
A great "slow burn heel turn".....the signs were there from the HIAC match as the Undertaker was more ruthless & wicked than we ever seen him....then he started acting more Cold until finally he turned after Summerslam 98. great stuff.

Triple H in 1999 his work between 1999-2001 is his best
Undertaker in 2001, I enjoyed the overhaul of his look and it was real cool for the time.
Randy Orton Face turn in 2010 was cool initially at it's start but it got old by the fall
Triple H's leading SmackDown in 2008 as face was also some of his very best work
Mark Henry's Hall of Pain run was redefining for him and lead to pretty alright match with John at MTIB 2013.

Not sure if it can be classed as underrated but Shawn Michaels turn on Marty Jannetty, when he threw him through the barber shop window.
Was one of the first angles I ever saw and got me hooked on WWF wrestling. As a twelve year old watching I was totally shocked.
Mike Tyson as well when he “joined” DX. Really stacked the deck against Austin, setting him up for the inevitable victory and sky rocketed his career.
One of my personal favourites in the underrated category was Vince being revealed as the higher power. It’s a storyline that seems to get panned but I thought it was great seeing McMahon’s smug face as he pulled his hood back.
