As far as matches that I know fans would definitely want to see when it comes to WrestleMania 36, I can think of at least 5 matches that I know I as a fan would love to see and those 5 matches being:
RAW Women's Championship- Becky Lynch (c) vs Shayna Baszler
WWE Universal Championship- The Fiend Bray Wyatt (c) vs Aleister Black (2020 Royal Rumble Match winner) (Smackdown's main event)
Roman Reigns vs The Rock
WWE Championship- Brock Lesnar (c) vs Drew McIntyre (RAW main event)
No Holds Barred- CM Punk vs Seth Rollins

I actually find it underwhelming that Seth has come out challenging Punk.
I'd much rather see CM Punk vs AJ Styles
Decent card above though.

If that list only the first one I would want to see. I am not a fan of the Fiend gimmick because of the red lighting during the matches. So until that stops I have no desire to watch the Fiend.
Roman vs Rock is too late now. The Rock is past his prime.
Brock vs McIntyre - While on paper it looks great and would probably be a good match. But to me the only way that would be something I want to see is if McIntyre goes over at the end. Normally I don’t care who wins or loses as long as the effort has been there, but McIntyre has been getting the short end of the stick this whole year. By being in the backseat for the Spotlight to be on Shane and anyone else they paired him with.
CM Punk vs Rollins another match that too late. CM Punk has been too far removed now for me to care if he ever steps into a ring again. And honestly I was never really a big CM Punk fan when he was is his prime.

I left Rollins off my fantasy card but I’m honestly sick of him (never been a big Rollins fans). Will never happen but he’s off my WM fantasy card.

It would take CM Punk to not have the main event be Roman vs Bray. I'm not holding my breath... At least I'll be able to beat traffic out of the stadium. Especially after the sh*t show that was leaving Metlife last year.

When the Fox WWE Twitter account recently tweeted asking fans matches they'd like to see at WrestleMania, a large portion of the responses were suggesting either Sasha Banks VS Bayley, or a Four Horsewomen Fatal Four Way. Can't go wrong with either of those matches in my view. The past proves how incredible either of those matches would be, and we know all four women are great at telling a story and building to a match.
But also, CM Punk VS literally anyone. There's not really much explanation needed with that one.

Sad thing is that rumors say the WWE convinced FOX to let them move Brock to Raw so that Fiend/Roman could main event WM. If true we can safely turn off WM before that match. It may even rival the reviled Roman/HHH match at WM32.

Kevin Owens Vs. Brock Lesnar in a Street Fight for the WWE Championship
Owens has disrespected and shook up the environment of the WWE. Owens has been on a tear climbing back to the top as the biggest rebel in the WWE. While Brock Lesnar has went down in history has the most dominant superstar of this decade. Lesnar looks to break Owens and his resolve, but Owens mentions the man's strength with brutality. The odds stacked Stephanie had vowed to put Owens out and stop him. Owens took the Royal Rumble win home and has ticket destined for the WWE Title. But, when all else failed; Lesnar was pushed to finish the deed. - Owens goes over
Daniel Bryan Vs. The Miz
Daniel Bryan's career has been nothing but chaos. And high ups and low downs have defined it. And Bryan has found a whole year of finding himself and struggling of the trauma the Fiend invoked on him. However in the end game it made Bryan much stronger as a person. The Miz has much unfinished business and wants to expose Bryan as a fraud who plays the fans emotions. The Miz this time has vowed to put Bryan down for good, and bringing new levels of heat to this. With Miz trying to incriminate and put Bryan's family life on display.
Braun Strowman Vs. John Cena in a Falls Count Anywhere
Braun Strowman had won the IC Championship, and his been reclaimed much lost momentum. Strowman tore the Royal Rumble apart, but Cena's return cut this short. Cena cut Strowman's rise to the top. Strowman returned eliminating Cena. However Cena showed up to Fast Lane with front row ticket after suspension when he assaulted and beat Strowman with a Chain. Cena cost Strowman a Last Chance Cross promotional Elimination Chamber. The bets were off after both men could not be controlled. The Former face of the company returns to face one of the rising faces in match that could make or break Strowman's career. - Strowman wins and is pushed into the 2020 title picture.
The Undertaker Vs. Bobby Lashley
Bobby Lashley has always been one of the most promising superstars to grace our company. Lashley has been in the main events and has stirred up controversy. However, he's never quite been to the top with title shot. Lashley has looked in hopes to cripple the Undertaker and end it for good. And no one has done it for good. Lashley for eternal answer for the greatest supernatural power in the WWE. Lashley looks to submit his name in history books. - Taker goes over
Shane McMahon Vs. Triple H in I quit match
Shane McMahon has gone on the deep end. McMahon just can't handle himself since losing his job. He's pleaded his father time and time again. However, he's crossed line. He assaulted his father in his aging years. Shane followed up by threatening Stephanie McMahon. Triple H assaulted Shane to leave message. Shane would forever cross the line attacking Stephanie. Shane would hire off series of disgruntled superstars to lead walkout followed by series of attacks on roster members on SmackDown. The anger in Triple H has been woke up, and the Game is ready to play against a mentally unstable Shane McMahon. - Triple H goes over
Cm Punk Vs. Roman Reigns
Roman Reigns has grown disgusted in Cm Punk. Roman Reigns mentions how's it been since Punk left and being one of the top superstars. Punk didn't want to wrestle but wanted to rebuild his bond with the boys and the fans. Reigns has snapped and targeted Punk. And wants to take his anger out by targeting the darling of the fans - Reigns
Drew Mcintyre Defeats Rusev, Nakurma, Aliester Black, Rey Mysterio, Dolph Ziggler, Sheamus in a Money in The Bank Ladder match
AJ Styles Vs. Cesaro
Cesaro has put has on some of the most entertaining and technically advanced matches. Cesaro is one of the most talented performers in the world. However, hasn't shined outside of his tag team and WM 30's Battle Royal. Cesaro has looked for something to set himself apart. He went out on challenge and upstaged many stars. Further angering AJ Styles. Who felt upstaged. Styles has felt this get under his skin. And he finally reached out to give Cesaro the challenge. - Styles
Baron Corbin Vs. Randy Orton
Corbin has one of the biggest mouths in WWE history. Corbin has backed it up before but he has been and always will be one of the most hated wrestlers to ever grace the company. Orton didn't take Corbin's attitude. And nailed him with RKO. However, Corbin would not stop when was stung. And he'd keep picking at the bee hive. Leading hit and runs and being able to pit in the Apex Predator. With also gimmick of Orton outlasting his youth and his twilight hitting with Orton coming to 40 years old - Orton

Championship Title Unification matches!!
WWE Universal Champion vs. WWE World Champion vs. NXT Champion vs. NXT United Kingdom Champion
Raw Women's Champion vs. Smackdown Women's Champion vs. NXT Women's Champion vs. NXT United Kingdom Women's Champion
Raw Tag Team Champions vs. Smackdown Tag Team Champions vs. NXT Tag Team Champions vs. NXT United Kingdom Tag Team Champions
WWE Intercontinental Champion vs. WWE United States Champion vs. NXT North American Champion vs. NXT Cruiserweight Champion
With these 4 Unification matches, that will give us 6 Championship Title Belts, including the WWE 24 / 7 Championship Title Belt, and the WWE Women's Tag Team Championship Title Belts. Champions are allowed to appear on all shows. When a Champion loses, they become exclusive to the new Champion's former brand.
This will give more meaning to the Championship Title Belts. This would also create opportunities for big SuperStars to appear on NXT and NXT UK and raise ratings. Imagine the Shield in the UK for a few months.
This would also create opportunities for rising SuperStars to appear on Raw and Smackdown, and to be elevated to the main rosters. Imagine the Undisputed Era actually shocking the actual system.
AEW competing with WWE's 3rd / developmental brand is one thing, but AEW competing with WWE's Wednesday show, which in this case, would really be equal to WWE'S Monday and Friday show, would be something else.
What was the question again??
Oh, and one more thing, I don't care if it's WrestleMania III, or WrestleMania VI, or WrestleMania 36, Hulk Hogan vs. Ric Flair should definitely take place. If they really just can't go anymore, then I'd take Team Hogan vs. Team Flair...every year. I'd also add Team Stone Cold vs. Team Rock as well.

Mainly I want to see:
Main event - Roman Reigns beating Bray Wyatt for the Universal title with one spear.
Seth Rollins retaining the WWE title over CM Punk.
Brock Lesnar squashing Kevin Owens in a streetfight.
And a bunch of other stuff on the undercard.

Some matches that come to mind that I think that most fans would want to see and get behind with the right build,
Becky/Baszler Brock/Wyatt Hardys/Usos Goldberg/Reigns Punk/Rollins Punk/Triple H
Just some that pop to mind also even with it being done to death in the past I would say Cena/Orton one last time and for the 1st time one on one at Wrestlemania.It would be two living legends against each other who while not in their prime aren't to far out of it and have a long storied history together.

I know what I don't want to see:
HHH vs. Some random rushed feud person cuz yeah, everybody still wants to see his really exciting matches.
The Fiend wrestle in that red light.
Anything related to new Shield thing.
The Undertaker retiring again.
And here's a few things I'd like to see:
A tag team title match that is actually exciting and unpredictable.
Aleister Black in a featured match for the IC belt and him win it.
I can't think of much else, haha.
