This could be anything from moves, entrances, ring psychology, announcers, finishers, costumes, etc.
For me, two stick out.
1. The long time tradition of going for a pin early on. Especially after a small move like a body slam, etc. The pin NEVER happens and we all know it won't happen. STOP doing this. It's just not realistic.
2. Finishers that are FAR less powerful than other moves (and them getting a pin over said more powerful move). For example ... SUPERPLEX? Yeah, everyone kicks out. Cena's Attitude Adjustment? he ded. Or ... massive sit down powerbomb? Kick out at one! Stunner? he ded.

My only "wrestling annoyance" is that the wrestlers I like don't win enough.

I could never stand and still to this day cannot stand Vince McMahon announcing. 1,2 and YES HE Got Him ..no he didn’t . That drove me crazy and still does.

Championship introductions: I know some people feel this gives a match a "bight fight feel" I freaking hate them. You get a badass entrance that gets you jacked up for the match and then you have to wait a few minutes while the wrestlers just stand there in the ring opposite each other while we listen to them get announced.... even though the audience has heard them be announced a million times before.
Being Told What Happened Five Minutes Ago: I would love to know how much time is spent on RAW, Smackdown and unfortunately even NXT telling us what happened 5 to 10 minutes earlier in the show, it is freaking annoying!

When someone gets pinned then immediately rolls out of the ring.
Any chant with five claps.
The multi person corner superplex / powerbomb spot.
Spears through the guard rail.
Finisher fests.
When ladders are blatantly placed in a position to set up a spot rather than help a person win the match. Like when someone puts a ladder across the ring and guardrail.
When someone sells a move differently than usual in order to set up another move straight after, like a Sweet Chin Music into a Pedigree.
Overselling insults during a promo. He didn’t punch your mother, he just called you a jackass.
Repeating a table spot because the table didn’t break. Especially when it doesn’t break a second time either.
Winning a cage match by escaping through the door.
Lame nicknames. ‘Ravishing Russian’, ‘Swiss Cyborg’, ‘Extraordinary Man Who whatever whatever’ etc.
Inconsistent match rules, like rope breaks in some No DQ matches but not in others. Some refs in Hell In A Cell / Elimination Chambers allow pinfalls outside the ring whereas others don’t.
Kane’s Tombstone. The opponents head is usually level with his waist. Even the replays are shown from behind.
When two people stop fighting because one retreated to the stage. There’s no barrier between the stage and the ring.

Another one I have is the fake look of shock on a fans face. These are so freaking forced and I feel like the producers want to capture at least 50 of them each show!

Cutting away to fan reactions during matches.
The overuse of the "This is Awesome!" chant from fans.
Lack of selling commitment i.e., if the leg is worked thoroughly throughout a match and then the wrestler can suddenly run, jump, execute lifting moves no problem.

Matches 99% of the time end with finishers. Yeah, I know, that's why they are called "finishers". But surprise finishes for matches are fun too.

When wrestlers make the save and their music plays. Ruins the element of surprise.
In Cage matches when one guy is struggling to get to the door while the other guy is climbing out of the cage
When a wrestler who isn't part of the battle royal comes in and eliminates someone who is actually in the battle royal and that counts.
Battle Royals in which everyone is fighting and one person is just sitting out there and one there is one person left the person sitting outside eliminates the last person and they win. Shouldn't they be disqualified for not participating in the damn match until the end??
In Royal Rumble and battle royal matches when someone is taken out of the match, but gets back in because they were never "officially eliminated".
The money in the bank cash ins are getting annoying too
When a guy does a dive and the wrestlers outside make it painfully obvious that they are waiting for him by putting their arms around each other
Storylines and booking that makes no sense.
Brock Lesnar winning a major title and sitting out for months.
Cage matches with no blood

"Fight forever" chants always make me gag.
I hate when wrestlers talk into the camera during matches. That's changed a lot since its been in empty arenas just because it helps the awkward silence, but I think its just obnoxious. I feel like Seth Rollins used to do it a lot.
NXT main events. I don't know why. Don't ask me.

Royal Rumbles where a guy PICKS UP another guy over his head ... and then sends him to the mat instead of over the top rope for the elimination.
And while I know having 30 men in the ring at the same time is chaos ... the guys who get the last 5 spots in the Rumble have such an advantage. It's just stupid.
Gauntlet matches. See above. REALLY? The first guy beats 1-3 guys often but this last guy waltzes in and wins? So dumb.
Tradition be damned ... a distracted ref or a ref making a tag partner return to his corner oblivious to the action in the ring is just wrong.

How people just stand bent over and wait to take a fameasser. I noticed this alot with younger guys when they jump off the top rope. The guy getting jumped on just stands there while the guy jumping sets up.

When someone defends a singles title in a handicap match. Usually the 2 guys lose so if they ever challenge for the title as a solo, how can we take them seriously?
When the tag team champions get beat up by one guy.
When older guys come back for a nostalgia appearance and beat up one of today’s wrestlers who we are expected to pay to see.
Wrestlers losing to celebrities who aren’t believable(Beth Phoenix losing to Maria Menounos).
