Arn Anderson pinning.... PINNING Hulk Hogan on WCW Nitro for the 1...2...3!!!
That to me, will always be the most shocking upset in wrestling, because Hogan never usually gets pinned, and when he does it's for a big deal situation.

For me as an angry, hormonal teenager - Angle retaining at Armageddon 2000. More Recently - Cena beating Lesnar at Extreme Rules 2012.

For me, seeing early Edge easily defeat Vader was a shock, more shocking than his losses to Mark Henry and Bradshaw. Damn you Vince, what a waste!! Blake Beverley beat Virgil on Raw, although in hindsight, Virgil was the first stepping stone for everyone and the other Bev had left and they might have been thinking about pushing the remaining one. I was shocked when Marty Jannetty made one of his returns and defeated Skip in a squash match and even did an impressive top rope powerbomb on him. I was super shocked when Tatanka was finally beaten. It way was the way in which it was done too that made it all the more dramatic. I was shocked when British Bulldog lost the Intercontinental title so soon after winning it. The New Age Outlaws winning the tag titles from LOD. HBK & HHH treating LOD like bitches. Savio Vega pinning Waylon Mercy in Mercy’s first ppv match. Doink beating Crush at Wrestlemania 9. Hogan losing his first title defence against Yokozuna (again, no hindsight). John Laurinaitis beating John Cena. Wade Barrett beating John Cena. Alberto del Rio beating John Cena so easily for the US title. Mabel beating Undertaker at King of the Ring after such lame weak looking interference from Kama. Great Khali pinning Undertaker with his foot after a few chops and kicks. Mankind beating Undertaker in their first match. Mankind beating Undertaker in the Boiler Room Brawl.
Not sure if these count as upsets or even canon as they were designed to please the local crowd-base on a European tour, but Tito Santana giving Undertaker his first televised pinfall loss and British Bulldog pinning Ric Flair and Earthquake in singles were shocking results for me.
Also, Undertaker beating Undertaker at SummerSlam 94. I really thought Undertaker was gonna win!! 😂

Shelton Benjamin beating HHH like that. I was like whoa....
It's been hard to surprise me since the AE but that did it.
Also Mankind kicking UTs ass for most of 1996. I thought he was just another "monster of the week". Even after he beat UT at KOTR 96 I was sure UT would annihilate him at SSlam 1996....then you had the Bearer turn which NOBODY seen coming.
Then it was like..right UTs revenge comes at IYH: Buried Alive...but it didn't. This was booked really really well.
