I could think of better ones, but lately Hulk Hogan in the red pants and yellow cowboy boots (HOF, maybe?). I was only interested in and only collecting the Ultimate Warrior back then, and it's bugged me that I didn't grab him when I found Warrior.
Same with DM Wrestlemania VII Randy Savage. Grabbed Warrior and saw Macho multiple times, and now it stings cause it's such a beautiful figure and my collection includes all my favorites instead of just Warrior.

Demolition. I'm guessing Ax and Smash won't be getting new figures anytime soon (or ever). The price on them now is just hard to swallow.

King Harley Race, 100%. And not only because his fig is impossible to get for a sane price.
I was a huge KHR mark as a young teen during the Golden Era. I might have been the only one at the time, but man, I loved his entire King of the Ring gimmick!

Easily the BoAE Chris Jericho. My cart and my saved for later had a huge fight for the longest and I just kept telling myself, "I'll wait til next week" every week. Up until late June, early July, it went out of stock and now the figure is going for $40-50. So mad that I kept telling myself to wait and then it's finally gone. It was the only Jericho I needed too. Now, I purchase any figure that I absolutely need soon as they release online or if I see them in the store so that I don't have to worry about missing out on them ever again.

Probably legends Rick Martel Martel would be by number 2 after Harley Race.

That’s the thing right now, back in the day it took a while for figures to go up in price. USUALLY they went down in price first because they were deemed “old” and then they would skyrocket depending on circumstances such as rarity, popularity etc. Now a days, as soon as it sells out it’s like instantly double the price and within a month it’s $100 on eBay haha, it’s crazy

It would have been the Defining Moments Triple H but I finally tracked one down for a reasonably price a few months back - now either Harley; SES Punk or much less expensive compared to the others but don't see it very often probably the HOF Sting.
