Bianca and Sasha was the main event of night one. Edge/Bryan/Reigns was the main event of night two.

Actually it wasn't Wrestlemania 37 this year.
They were calling the shows, "Wrestlemania Saturday" and "Wrestlemania Sunday" so technically both Bianca vs. Sasha and Edge vs. Bryan vs. Reigns were the main events from the two nights.

People say this Mania (37) is the first one to not feature Triple H or Taker in a match in years but if both nights are completely different shows then that wouldn't be true as they weren't apart of Night 2 for WM 26 for example.

Separate cards taking place on different nights. Once the crowd was dismissed after the fulfillment of one match card (to negate "if a weather delay would have pushed half the card to Monday, does that mean 3 main events?" nonsense), that is its own night with its own climax.
Don't know how much simpler that can be broken down.
Also, did I miss the poll asking whether Banks-Belair or Lashley-McIntyre deserved Night 1's main event more?

Two separate shows. If both shows had been taped on the same day and aired on two days then yes, I would agree with you.
But the WWE itself even stated that their is Wrestlemania Saturday and Wrestlemania Sunday. Two events, two main events.

I watched all of night 1. Funny thing is, I only cared about night 2. Went to bed after the RVD rolling papers segment. I’ll watch the “main event” when I get home as that’s the match I wanted to see the most but now that I know RR retained I won’t really be excited. But I will say I’ll be more accepting of it since I didn’t stay up late last night.

The main event was, is, and will always be the WWE Championship Title match. The only exception is WrestleMania I, where the main event featured the WWE Champion.
It doesn't matter if it's the first match on the first night, the last match on the last night, the 3rd match on the 3rd night of NXT / NXT UK / 205 Live Takeover Worlds Collide. The WWE Championship Title Belt is the Main Event.

So by saying Bianca and Sasha main evented Wrestlemania. SO that means we just had Wrestlemania 37 and 38. Next year will be Mania 39 and 40 if they hold it on two nights. Not sorry, Roman/Bryan/Edge was the main event. Sasha and Bianca were the match before intermission.
