If you are asking which outfit they should redo or which characters? Then I have two different answers.
With WWE there is no way Rhonda Rousey or Shinsuke Nakamura deserved to be in Ultimate Edition form. I get that they are big names and Ultimate Edition was in the very early stages, but in my opinion they have not done enough to earn that spot.
I would change the Macho Man outfit. Just felt that his first Ultimate should have been a redo of Wrestlemania 7 retirement match. It is one of the best defining moments figures out there and its been over 10 years now.

My base level answer would be Shawn Michaels in his DX:IYH gear. I'd like to see how they could stretch the budget to make the entrance gear a touch less bulky, get a couple of heads for an entrance look as well as a mid/post match look, and utilize the fact that heads can pop off to include the choker with the ring on it. Really go all out for one of his best AE looks.
Barring that, since he's already getting another UE, I guess let's get another Bret. Late WWE, heel everywhere but Canada look. I never liked the shoulder-pad jacket, gimme the biker jacket with the big Hart Foundation logo on it.

Plus it would put an end to what’s going on on eBay. His Ultimate is selling the highest (or maybe second to The Rock, but it’s up there).

Bret - Survivor Series 95. It's my most wanted look of Bret and easily in my top ten figures I want. It's probably top 3 if you take out the talent Mattel can't do.

Brock Lesnar. Hands down the best Ultimate to date.
As for color variants:
- Bret Hart in any other attire, but most preferred in an attire resemling his second Hasbro figure.
- Hollywood Hogan red/yellow
- Ric Flair light blue attire
