I mainly collect legends at this point although occasionally I'll pick up newer superstars depending on who I'm really a fan of. I used to collect everything years ago and I quickly cut back on that once they started repeating too many of them and I cut back even more once they raised the prices the last time. I collect both loose and MOC.

I for the most part collect 1 figure for each person ranging from Andre's era to the current product and I only collect elite/ultimate/unrivaled or whatever that specific company calls it when the figure has a billion points of articulation. I work hard to make my own money and I refuse to buy any kind of basic unless it's for parts. I don't keep them MOC. I unbox them, bag them, bag their accessories and then put them in a big plastic waterproof box. Then they sit there and that's it. Sometimes I look at them lol
For the few that I do keep more than 1 figure of it's usually because they had different gimmicks that I liked i.e. Retro Hogan and Hollywood Hogan or gimmicks that were so vastly different in comparison that I could book them both in a believable manner like Godfather and Papa Shango or Mankind and Cactus Jack.

I buy all Mattel Retros, and Ultimates/Elites that fall in my sweet spot of 1990-1993. Sometimes I open, others I leave MOC for display. I'll buy assorted others with no pattern. Haven't bought any Bret Harts who Is my favorite because the recent headscan is terrible to me. Otherwise I'd buy every Bret.

I collected all WWF Hasbro figures. I think the only figures “missing” are the mail aways…but I have a great custom Hulk that does the trick. I’m also missing most of the mini figures but I do have the ring and the figures that came with it. I also own all variations of the Hasbro rings including both versions of the sound module.
I collect all Mattel retros (loose). I also collect many characters from 1983-2002 from independent retro makers like ZST, Epic, Rush, and Grapplers and Gimmicks.
For 7” figures I have two collections:
-Figures from my favorite games as a kid (Superstars, Wrestlefest, Royal Rumble, Raw, etc).
-Figures of modern guys I have a special live/personal memory of (Young Bucks, Keith Lee, Ospreay, Okada, Omega, Chuck Taylor, Naito, Brian Cage, Orange Cassidy and a handful of others.
