I'd say Edge, as I think it could be a believable, intriguing World Title match. The build-up would be tremendous. I could see an Undertaker/Umaga feud at a SummerSlam, or another big PPV. A Casket match between the two would make sense, bringing back the nostalgia of Undertaker/Yokozuna. Same between Edge/Taker but how did you know I had a Taker/Umaga feud at my last Summerslam lol

Undertaker vs. Edge is now a pointless Wrestlemania match. I don't care what the WWE or anyone else tries to sell me on, Edge already LOST at Wrestlemania. No matter what happens, he doesn't have a legit undefeated streak so I can't see fans being sold on it.

Although I love the Rumble to be a launching pad, for future champions and guys who deserve the belt...
...I personally wouldn't mind so much Big Daddy V being victorious at the Rumble, challenging Taker and losing. As the match could be real interesting.
Of course I say that as you failed a potentially strong post, by being close-minded, by naming two specific choices.
And just so I can sleep at night, I hope MVP wins the MITB.

Yeah Umaga is boring. We see Samoan Bulldozers all the time don't we? Samoan Spike?? OVERUSED.
I dont know about Edge... I wouldn't want to see either Undefeated streak go to waste. I think Shawn Michaels vs Undertaker would be a great one. Or Chris Jericho vs. The Undertaker

I cant imagine anything being lined up for HBK on Raw when he returns.
A feud with Kennedy would be cool, but I dont see that happening.
So if HBK returns in mid-fall, it''d be just in time to start up another "Interbrand dream match" between him and the Undertaker for WM.
It's not like they haven't faced eachother before... but it's been almost 10 years since a one on one matchup. I'd say it's good timing for it.
