all the wrestlemanias are entertaining. especially wm 17. as said, the rise and fall of ecw is excellent. i also reccomend ecw one night stand. Bret Hart's dvd is excellent, as is the Rocks. I enjoyed both the HIAC and Ladder Mtach DVF's. Lastly, the history of the WWE championship is good viewing,

Really depends on your personal taste, as for superstar documentaries.
But some WWE DVD's I would say Ladder match, Hell in the Cell, Smackdown! Anniversary was good too. Then theres the documentaries where again, depends on who you like. I enjoyed Batista's, Eddies, Jeff's new one and The Rocks

People always seem to suggest superstar documentaries, but I personally like the idea of having PPV collections. Here are some pay-per-views that I think are damn good and perhaps even must-haves (bare in mind I have only seen PPVs from 2000 onwards so don't ask me about more old school shows):
- The 2000-2009 Royal Rumbles. I didn't enjoy the 2007 one much, but I found all the others to be very entertaining. The top three would probably be 2003, 2005 and 2001 for me, but I thought 2004 and 2006 both had very good rumble matches too.
- Survivor Series 2001-2005 are all very good. 2001 has WWE vs The Alliance, 2002 has the first-ever Elimination Chamber match, 2003 contains Austin's last night as a part of the WWE roster and a Buried Alive match, 2004 has a very good 5-on-5 tag team match to decide which team will run RAW for the next month, and 2005 has a great Smackdown vs RAW 5-on-5 tag team match.
- WrestleMania is always a good pay-per-view to have. I'd say that the 2000, 2002 and 2007 ones are the weakest WrestleManias of last decade, but all the others are flat-out brilliant in my mind, especially 2001.
- So, setting aside the more obvious ones: Backlash 2001, KOTR 2001, SummerSlam 2002, No Way Out 2003, SummerSlam 2004, NYR 2005 (only because of the chamber), SummerSlam 2005, One Night Stand 2006, Royal Rumble 2008 and 2009, and all the PPVs from SummerSlam onwards in 2009 are pretty good. To be honest, avoid anything from 2007, and the rest is actually all quite good.

The Ultimate Ric Flair Collection Bret Hart: The Best There Is, The Best There Was, The Best There Ever Will Be
Two of the BEST DVDs WWE has ever produced. Others that are very good are Saturday Night's Main Event, the Ladder Match DVD, History of the World Championship, Heartbreak and Triumph, Viva La Raza, Edge: A Decade of Decadence, Mick Foley's Greatest Hits and Misses, and, depending on whether or not you can watch his matches, the Chris Benoit Hard Knocks DVD is filled with great wrestling matches.

I enjoyed the Rise and Fall of WCW too.
Survivor Series 2002 was also a great PPV if not already mentionned.
Also, Summerslam 2002.

Haven't seen it mentioned yet but I like the Self Destruction of the Ultimate Warrior as well. It's got some pretty funny moments with Heenan and others.
Rise and Fall of WCW was good but the documentary part of it could have been a lot better although it has a solid selection of matches on it.

Rise & Fall Of ECW / Rise & Fall Of WCW - These are pretty cool if you want a piece of both brands in your collection or if you simply want to brush up on some wrestling history.
I would also suggest getting the 3-disc set dvd's of a few superstars. They are always entertaining and you learn more about the superstar. Another plus is that they're always loaded with matches.
Monday Night Wars - This was a very important "era" in wrestling and the dvd itself is very good. Once again, with this one you can brush up on history.
Now, you could either get ALL the WrestleMania Anthology volumes or you could get volume 1,2 and 3 which has all the WrestleMania's from 1985-1999 and then pay a higher price and get the original WWF releases of WrestleMania 16, X-Seven and 18. I believe that you can find WrestleMania 19-25 dvd's for a good price if you take the time to look.
If your from the UK, you could also get the "Tagged Classics" dvd's. These are UNCUT and unblurred copies of ppv's (including WrestleMania). These go all the way back to WrestleMania 1&2 to WrestleMania 17. They come in 2-packs and they are a great way to build a collection while spending less money. You can also find alot of the ppv's from 1990-2001 in these two disc sets.

WWF Action. A look back at the first 8 months of 2001, really awesome watch (Austin heel turn, Hardcore title, Perry Saturn, Molly Holly/Spike love angle & some of the Invasion). Got some amazing DVD Extras too.
