Out of those I'd say Big Bubba but I would need The Midnight Express and Jim Cornette to go along with him. Why stop there, throw in a real scale scaffold as well. Then I would have the Starrcade 86 Night of The Skywalkers set.

I understand why they made Akeem - big, colourful, and gives us the option of having the Twin Towers if they ever make a Bossman ~ but it would be an immortal sin if they didn't make One Man Gang down the line!

It's a moot point since it's never going to happen, but I think a "King of Harts" version would do best.
Big Bossman
Big Bubba would be a peg warmer. Heel '80s and face '90s are the same, except for the weight he lost. I'd go with a thinner face version, as that seems to be how most people remember him.
Crush
Like you said, Demolition, face Kona, and heel Kona versions are essential. Anything else is just too obscure.
Yokozuna
Again, these might be a little too similar to warrant separate singles releases. The version with red tights and a black bow is probably his best-known look. Any rereleases or variants can use various combos of red, white, and black.
Nasty Boys,
Again, very similar. Their AWA run didn't have the colorful outfits everyone remembers. Go with the WWF.
