My girlfriend really wants to know more about wrestling and why I'm so infatuated by it, but I honestly don't know where to start.
Any great promos / matches I should show her?

HBK vs Taker WM 25 HBK Vs Flair WM 24 Any Hardy Boyz vs E&C vs Dudleys match Jeff Hardy vs Kurt Angle no surrender 2010 (underated match) Punk vs Cena MITB 11 RVD vs Cena ECW ONS 06 Any ECW match from the 90s will amaze a new fan.
Those are some GREAT matches. Hardy Boyz vs Dudleys vs E&C would be the best thing to first show a new fan imo.

Thing is with all of these great matches, the reason they were so great is because you are invested in the outcomes and the wrestlers. Never start with matches, always promos and such. Austin from the Attitude era is a great way to start. Just all the crazy sh** he used to do.

Only sometimes is like that with the matches, if you an watch old Hardy Boyz vs E&C vs Dudleys TLC match or an old RVD Sabu match its not about the storyline its about the awesome spots they used to do.

Make her watch this documentary, then take her to a WWE house show. Also explain that it has it's positives & negatives. Be SURE to explain that just because you like SOME Wrestlers & styles of wrestling, but that doesn't mean you like ALL types of wrestling. Tell her that you have preferences & that certain segments that are seemingly stupid are not meant for adults, but geared toward CHILDREN.
It's NOT a sport, but a theatrical portrayal there of.

I went with the promo when mankind transformed into cactus jack before the 2000 RR. Explained what happened to mankind, what Cactus represented, etc.

Alicia fox vs Melina! No but it depends on her personality. I would say the match where Trish and lita main evened raw since it would show her that women can wrestle to and that they can be just as good as the guys. If she prefers a male match then any cm punk or Daniel Bryan match that doesn't involve cena cause you don't want her to turn to the cenation.

I would show her matches that tell a great story rather than really technical matches. Pick out some of the most interesting storylines and show them to her (you might have to go back a few years for that).

I agree with starting with promos first, and start with your favorite guys. My GF's first real exposure to it, (for the first time in years since she watched with her grandfather who loved it), was when she took me to a SmackDown taping after Christmas last year. After that, she seemed to remember the Big Show (even pointing him out from an old WCW Giant promo poster at a carnival). She also took an interest in the two guys I like: CM Punk, and of course, Daniel Bryan. She then sat ringside with me at Hell In A Cell, and enjoyed herself (thinking it was cute how I acted like a kid on Christmas morning). Fast forward to Christmas, where she got me six pieces of Daniel Bryan merch.
Point being, expose her slowly, and let her know who you really like. With any luck, she'll gravitate to it and develop favorites of her own. And at the very least, have an understanding of why you like it so much.

My girlfriend didn't start appreciating Wrestling until I explained it to her like a beautiful dance, I then showed her Bret vs. Owen at Wrestlemania 10. She really started to get it then. Promo wise, The Rock resonates with her the most, but enjoys Punk, both in-ring and acting wise. She also has a soft spot for big guys like Big Show.
