My favourite to watch is Kevin Steen, he's been in a lot of shoot-type interviews and they're always a good watch with good stories and interesting insight. I would've been more of a fan of Cornette's stuff if I had've watched more of old school WWF/WCW etc. but I've mainly just watched more recent wrestling so overall Steen is a better fit for my interests.

First and foremost and forever, you have to watch Billy Jerk Haynes shoot interviews. This guy is so bat crap crazy and he pulls no punches. I can't seem to find any of the good stuff on youtube. But trust me, you would love it!
Second is Ken Patera. The one I saw he was drinking throughout the whole thing. Here's a little clip! NSFW!
