Which WrestleMania matches did you want to see that were realistically possible, yet never came to fruition? Here are a couple off the top of my head.
Edge v. Orton @ WrestleMania 23: It is criminal that this never happened and instead Edge and Randy were placed in a gigantic MITB. The feud was there, the talent and Mania caliber match were all there, and for some reason the trigger was never pulled.
Flair v. Hogan @ WrestleMania VIII: We all know the reasoning and everything, but poor house show chemistry should not have derailed one of the biggest matches ever. Hogan's match with Sid was a dud and I am positive he and Flair would have had a good showing.

Daniel Bryan Vs. Shinsuke Nakamura

(Apperantly they where suppose to feud but it got leaked before Christian's Return)

Wasn't Edge hurt around Mania 23 and they needed to put him in a multi-man match to help cover it up? I seem to remember there being a pretty specific reason for it at the time.
The two that specifically come to mind for me come specifically from Mania 29, which, to me, from a booking perspective, was a disaster.
The Rock vs. John Cena vs. CM Punk (Wrestlemania 29)
Ryback vs. Big Show or Ryback (and two other dudes) vs. The Shield (Wrestlemania 29)

WM 20- Vince Vs Bischoff
WM 20- Goldberg Vs Austin
WM 22- The Rock Vs HBK (I remember it being reported that Rock turned down that match at WM 22 around Survivor Series 2005)
WM 22- Hogan Vs Austin
WM 25- Hogan Vs Cena

Ricky Steamboat vs Randy Savage: in the second round of the WM IV tournament. I still think we were robbed by not having a rematch from the previous year. A victory for Savage would have gotten that monkey off his back and we would most likely still be talking about that rematch to this day.

Undertaker should've faced Bam Bam at WrestleMania IX. They normally had decent matches against each other.
I'll always say that Ryback vs Big Show for the WHC and Punk vs Rock vs Cena for the WWE Championship should've happened at WM 29.
Sting vs Undertaker should've happened last year.

Punk Vs Cena should have main evented a Wrestlemania. I liked his idea from the Cabana podcast of Rock/Punk/Cena triple threat. Bryan/Nakamura was a pipe dream I had too.

Wrestlemania 22: Undertaker vs Kurt Angle, World Heavyweight Championship
Wrestlemania 23: Triple H vs Kurt Angle (Should have happened had injuries not occurred)
Wrestlemania 29: The Rock vs John Cena vs CM Punk, WWE Championship
Wrestlemania 31: Undertaker vs Sting (I'd like to think they were saving it for 32 hence why they went with Triple H, a shame in hindsight)
