How would I book them is the easiest question to answer that I have ever been asked. I wouldn't. Beat me to it.

Lesnar needs to win. Lesner beat Undertaker, if Goldberg would beat Lesner it would be like pooping all over the wwe "competitiveness". If Lesner were to job to someone it should be a younger guy who will be in the company for the next decade.

Goldberg should have done a few squash matches first so WWE could play it as "look he can still go." Instead the whole he hasn't wrestled in over a decade.
One match could have been a handicap versus two local jobbers. During or after the match Brock comes out grabs one of the jobbers and F-5's them and the Goldberg gives the other a jackhammer. Staredown and commercial.
For the match the two should just brawl. Throw in som finishers. Not sure who would win. Neither really needs the W, though Brock has that loss from Mania he could avenge.

Match starts goldberg charges lesnar hits a spear right off the bell, goldberg waits for lesnar to get up and eat a jackhammer brock reverses is and takes goldberg to suplex city then it's it's just a systematic destruction of goldberg. The fight goes to the outside where goldberg manages to jack hammer brock through the announce table lesnar is down for the 9 count but makes it back into the ring where goldberg is poised for the spear brock dodges it goldberg crashes into the corner Nd takes an F5 kicks out eats suplexes and loses afyer another f5

I would not have booked this match. It's a lose-lose situation.
If Goldberg wins, you're basically saying that a guy over 50 who hasn't stepped foot in a ring in 12 years can just waltz in and beat the guy who broke The Streak, mauled John Cena for the WWE Championship, and almost killed Randy Orton. Younger, full time wrestlers can't touch Lesnar, but Goldberg, coming off a 12 year hiatus is going to get it done? Would make Brock look real bad.
If Brock Lesnar wins, it goes over like a wet fart just like what they did with Sting. You bring this guy in, tout him as being so important and such a legend and icon, you build him up and introduce him to an entirely new generation of fans who might not know much about Goldberg.....and then he loses. Why bring Goldberg back just to lose?
Just like with Sting, if Goldberg is having a match, he should WIN and it should have been against somebody who it would make sense to have him beat.
This whole thing is just wrong. Like I said, it's lose-lose.

Apparently Goldberg tweaked his shoulder a bit... so how about this change...
The Undertaker is "back" so to speak... so what if the match takes place, and around the 7 minute mark the Ref gets "knocked out" the lights go out, and when they come back on, Taker is in the middle of the ring. Taker chokeslams and tombstones Lesnar, then Goldberg spears and jackhammers Lesnar... Goldberg gets the pin... while Taker vs Lesnar is again a "thing" .... possibly a WM thing... or just a Royal Rumble throwaway...

If this really is Goldberg's last match, then Brock should be going over. BUT Goldberg should get the moral win.
eg. Goldberg spears Brock, then Jackhammers him... as the ref is counting though, Heyman pulls him out the ring and starts shouting etc. (Goldberg doesn't notice and meanwhile the crowd can count to about 5 or 6). Once Goldberg notices, he confronts Heyman and looks like he's about to Jackhammer him - then Brock hits on the back of the head and rolls him up (or suplexes him) for the 3-count. After the match, a PO'd Goldberg can spear both Brock and Heyman (...maybe even together, lol).

We need Lesnar to legit KO Goldberg like he did Orton for the sake of the buisness. If not well this makes pro wrestling looo weaker than it alreadt does unfortunately:(

Assuming that I'd even book the match in the first place, it's really pretty simple to me.
I realize this isn't going to happen, but I've thought about this since they first teased, and then announced the match.
I'd have Lesnar squash him in the way he squashed John Cena at Summerslam '14. It would be an all out, systematic beating and an absolutely dominant win.
For all we know, Golberg is going to work this one match and be done. Brock Lesnar is under contract, still performing at all the major events, and still has the built in equity of being hugely protected. That's something almost no one in the company has. Goldberg is nearly 50 years old. He hasn't wrestled in over a decade. He should not be competitive with Brock Lesnar, period.
This should be a statement win for Brock, and further cement the rub someone will get from eventually beating him.

People keep acting like Goldberg has a chance to win. This is a one off match, and unlike all of Lesnar's other matches, I'm not getting my hopes up for this. Goldberg said he tweaked his shoulder on Raw and he looked gassed this past week.
I see this similar to every other Lesnar match today. Brock with the early suplexes. Goldberg hits a few spears and Cole goes nuts acting like Lesnar is finished. Goldberg goes for a jackhammer but Lesnar all of a sudden no sells everything and hits more German Suplexes and a couple F5s for the win.
Remember, even though he had a quick run in the WWE, Goldberg is still considered "WCW" by Vince. Just like Sting, Goldberg is being brought in to put over one of Vince's guys.

UnderTaker tombstone. 1-2-3.
Oh wait, Survivor Series?
Goldberg spears from one table to another.
Eventually wins with a jackhammer. After match Taker makes his presence known and challenges Goldberg for WrestleMania by pointing at the sign. Giving Goldberg 5 months to prepare.

They need to book this slow (pacing) with high impact power moves (no crap). I would have Brock beat the crap out of Goldberg for most of the match, but unable to put him away. Goldberg keeps fighting back, but Lesner floors any attempt. Take it to the outside. Have them do the spear through the guard rail spot (as Goldberg last attempt to fight a come back). Maybe an F5 through the announce table.
It needs to end with Brock F5 Goldberg mutliable times to put him away. I think at the end they need to book the whole MMA hug it out deal. This sets up any thing in the future, if they ever wanted a Brock Goldberg super team... which I think they could do at Mania.
The other option is to go the run in way, maybe Taker comes down and gets Goldberg the win.
No matter how they book this it's going to be a train wreck, I just hope they keep it short (in time) and to the point. Goldberg has been blown up after walking out and climbing in the ring. He isn't going to have much in the tank after about 180 seconds I wouldn't think. Lesner is going to have to carry this one.
