The Beastie Boys have some great ones, especially from "Licensed to Ill" and "Paul's Boutique."
Beastie Boys: Rhymin' and Stealin' (sample: "When the Levee Breaks" by Led Zeppelin)
Beastie Boys: Slow Ride (contains elements of "Low Rider" by War)
Beastie Boys: Egg Man (sample: "Superfly" by Curtis Mayfield)
In Will Smith's case, I'm not a big fan of his work, but he chooses pretty good songs to sample:
Will Smith: Wild Wild West (sample: "I Wish" by Stevie Wonder)
Will Smith: Men in Black (sample: "Forget Me Nots" by Patrice Rushen)
Will Smith: Will2K (sample: "Rock the Casbah" by the Clash)
50 Cent: I Get Money Mary J. Blige: Real Love (both songs sample: "Top Billin'" by Audio Two... one of the greatest old school hip hop songs of all time.)
That's all I can think of off the top of my head. But there are tons more.
EDIT: To add...
Ini Kamoze: Here Comes the Hotstepper (sample: "Heartbeat" by Taana Gardner)
Trick Daddy: Take it to Da House (sample: "Boogie Shoes" by KC & the Sunshine Band)
Sugarhill Gang: Rapper's Delight (sample: "Good Times" by Chic)
EDIT #2:
Nice and Smooth: Hip Hop Junkies (sample: "I Think I Love You" by the Partridge Family)
Nice and Smooth: Sometimes I Rhyme Slow (sample: "Fast Car" by Tracy Chapman)

I never really appreciated sampling until I got into Beastie Boys. I enjoy Kanye West's use of samples too.

Parliament/Funkadelic might be the most sampled group of all time.

Parliament/Funkadelic might be the most sampled group of all time. Definitely. It would be stupid of producers to ignore Bernie Worrell's plethora of sweet keyboard noises.
