Mine is UFC 79 because it was te first one I saw live! By live I mean live on TV. all the others I had seen were weeks after thy happened... It was awesome! Chuck vs. Silva was and is amazing!!

The Ultimate Ultimate 96 (alternately called the Ultimate Ultimate II)
One of the finest early cards they put on, often best watched in conjunction with the other best PPV they put on of 1996, UFC 10.
Frye's long drawn out battle with Goodridge, Tank unleashing the now infamous Nelmark KO, Kimo weathering the storm and stopping Paul Varelans, Ken Shamrock's final UFC fight for the ensuing six years, and the "shortest full blown war in UFC history" between Frye and Tank in the finals where despite having his face turned into ground beef, Frye takes the W and prompts Tank to cut the famous "I don't respect anyone" interview.
A very solid card from top to bottom considering the participants and what I consider to by my MMA hero (Don Frye)'s finest hour.

I honestly can't decide between these:
-UFC 49: Couture/Vitor III, Couture/Wanderlei in the Octagon with the UFC and PRIDE belts, Liddell ko'ing Vernon White, and a ton of fights ended with big knockout -UFC 52: Couture/Liddell II, Hughes/Trigg II(one of my favorite fights ever) -UFC 79: Liddell vs Wanderlei finally and GSP/Hughes III -UFC 81: Seeing Nog coming back like that was amazing -UFC 84: Penn/Sherk, The Return of the Axe Murderer and Tito/Machida(atleast the last round)

UFC 52
Frank Trigg vs. Matt Hughes II is one of the best fights I have ever seen. Couture vs. Liddell II was an amazing fight that really pissed me off that Couture lost.
but definately UFC 84 takes the cake. Tito vs. Machida was lackluster until the final round when Tito locked in that triangle. I marked out like a little b**** but then when he tried to transition from a triangle to an armbar I was so disappointed. If he would have held on to the triangle I think he might have won and we might still have Tito in the UFC. Seeing Wanderlei destroy Keith Jardine and wiping off that damn smirk of his really satisfied me and made me feel like the 54.95 was well worth the price. Plus Sherk vs. Penn was just unbelievable. A completely different BJ Penn. I have never seen Sherk in such a poor performance.

My favorite match is would have to be Couture spanking(literally) Tito at UFC 44.

A guy after my own heart; nice call on UFC 10...along with the UU96 the best single night tourney(s) they put on. 44 is underrated too...the Rivera/Loiseau fight is one I rewatch a lot...great example of effectively applied inside work.
