I've tried several times to figure out why this was, so this is my first stab at it in the Classic board
If you look back at early-mid 80's MSG house shows and other events, the bell is rung quite often during in ring introductions (usually after the introduction of the match itself, and after each particpant). Prime examples of this would be Wrestlemania 1 & MSG House Shows featured on WWE Old School on 24/7.
My first thought was that it's a way of restoring order or getting attention in the crowd, like a judge's gavel is in the courtroom. As far as i can tell, this only happened in the 80's, but i worked an indy show in Jersey in July of 07 for NWS, and they did the same thing when introducing the staff/personnel for the show
It's a mystery as far as i'm concerned, any ideas??
