Because that's what the Undertaker is so respected for; his luxurious hair.
When he comes back he'll still be putting out the same effort into his matches as always. A little change will be fine. Who knows, maybe he'll even grow it a bit like his ABA days

Undertaker is the greatest big wrestler in the history of wrestling. If his head his TRULY shaved...he just retire now at 19-0. I'm sorry but that's NOT The Undertaker that has been my absolute FAVORITE superstar since I first laid eyes on wrestling.

Maybe he just getting older and is tired of all that long hair. I know many older men who still had long hair that just cut it all off one day.

Having long hair can be such a burden. Have to look after it and comb it etc. Much easier when I have short hair, can dry it in 10 seconds and be done with it! Got to keep the long hair at the moment though because i'm just so god damn sexy with it.
