What do you tend to do with the accessories a certain figure might come with?
For me, it all depends. If a wrestler comes with a championship I am sure to put it on somebody, be it them or somebody else. For my Elite 8 Sheamus, I let him keep his pipe, cross and championship. For Rick Martel I let him hold his Arrogance and sun glasses on.
For somebody like Bam Bam Bigelow, I took his vest off, because I didn't like it. For Macho Man L5, I decided not to use his shirt because I think he looks better without it. However, I still have his sunglasses and bandana on him.
What about you? What do you do with your accessories?

Weapons I'll put away cause it looks weird when a figure is holding them. Shirts will stay off if that figure has trunks and jackets will stay on except for E6 Goldust since it keeps falling forward. Minor accessories like Sheamus' necklace, Kane's chains etc stay on though. Championships go on whatever wrestler has that belt in real life. If I don't have a figure of a current champion then I'll put the belt away with all my other accessories not being used.

I have them all on display with their figures except the championships aren't on the correct people... and Demolition's masks aren't on them either.

I put titles on people but things like robes or jackets I take off. Except for the DM Savage. Its in full attire on my shelf

Accessories I dont use I store in a zip lock bag and kept in a drawer.

I bought so many Funks and Bulldogs from the Target clearance they're accessories went to the trash.

I pretty much do everything the OP mentioned. I don't like the frilly material Mattel used for their original shirts, but the purple Macho Man shirt is so iconic I have him wearing it. I do keep robes on folks though, but they are opened at the front to show of any tights designs (like Rick Rude for instance).
What really gave me a dilemma was Mr. Wonderful - he's got blue tights which pops on the shelf and a design on the back, but with his diamond robe on it hides all that, so sometimes I have him posed without a robe and sometimes I have him wearing it.
Bam Bam's accessories were stupid, and for Vader I simply have him in one of his masks and the Jakks Mastadon helmet which better suits him - traded away the stupid white castle of fear cape.

I never display trackpants (E4 Kofi) so those just get discarded in a bin. I also took Bam Bam's overshirt off because as neat of an accessory it was, it didn't look as good as his fully painted flames design under the shirt. I kept the armguards, though. I always use the title belts and look forward to getting the new tag titles and divas title whenever they make them (soon). Sometimes I mod a certain accessory. I didn't like Big Show with sleeves on his shirt so I carefully cut them off - looks way better.

Legends - Display them with them (except Macho's tshirt)
Elites - get's tossed in a box other than HHH's Sledge/Bottle & title belts which get displayed.

I put them in a bin if its accessories I don't want on the figure. Thankfully with Mattel there's not that many accessories with Jakks I have 3 full bins of accessories

I buy every elite & have multiples of each, so I have a massive tub full of accessories, I must have like 10 of each belt at least. (not an invite to be pmed). I hate the rubber coats like miz, regal, goldust, taker, edge, because they are big & take up so much room
