The recipe post says Big John Studd but I don't recall Hercules smiling that much. I am looking for the late 80's early 90's look. (See pic) Thanks for any suggestions you might have!

I think a Tommy Dreamer with modded hair and beard would work quite well, although come to think of it a heavily modded Goldberg head could work nicely also.
P.s. CS8 Brody's chains would work wonders if you're basing it on the pic.
