With the addition of the WWE Network being able to stream PPVs in amazing 1080p quality, I'm trying to find some PPVs to re-watch since the addition of HD in the WWE in January 2008.
All I can muster up right now are No Mercy 2008, No Way Out 2008, Money In The Bank 2011, Extreme Rules 2012 and Tables Ladders and Chairs 2012.
No WrestleMania's of course.

The initial MITB 2010 PPV is worth looking at too, at least for the quality of the MITB matches.

WWE Network streams 720p tops. But five shows I'd recommend:
Royal Rumble 2008 The first HD show. Jeff Hardy vs Randy Orton was a great title match right as Jeff was rising to that megastar main-event status. And the Rumble was awesome, featuring the greatest surprise return WWE has pulled off in the modern era.
SummerSlam 2009 Jeff Hardy vs CM Punk in a TLC main event, an Undertaker return, a huge DX entrance and a great match against Legacy. Brilliant show. Just skip Orton vs Cena.
Extreme Rules 2012 John Cena vs Brock Lesnar was one of the best PPV main events ever, and Sheamus vs Bryan and Punk vs Jericho on the undercard were good too. Pretty awesome show all-round.
TLC 2012 Mainly for The Shield's first ever PPV match, a TLC against Ryback and Team Hell No that was brutal and thrilling.
Extreme Rules 2013 The Shield's first title shots, Randy Orton vs Big Show being a surprisingly great match, and an amazing HHH vs Lesnar cage main event after their first two matches were pretty dull.

I think it streams 1080p for me on my Xbox 360 (although the stream on WWE.com is definitely 720p), the quality is amazing nonetheless. Great list by the way, I'm definitely going to be checking out Royal Rumble 2008 as soon as possible (loved that PPV).

I'd recommend Survivor Series 2012. An event I personally enjoyed anyways. The triple threat was nice, especially with how it ended. It was also nice to see Ziggler get his moment in the tag match.
I also may be in the minority on this, but I REALLY enjoyed both the Royal Rumble and the Elimination Chamber events from this year.
That being said, most of what I was going to suggest has already been mentioned.

No Way Out 2009 just based on the two Elimination Chamber matches alone!
Triple H vs. Edge vs. Big Show vs. Undertaker vs. Jeff Hardy vs. Kozlov
John Cena vs. Rey Mysterio vs. Kane vs. Mike Knox vs. Chris Jericho vs. Edge
Two solid Chamber matches, and the middle of the card had HBK vs. JBL, Orton vs. Shane McMahon, and Finlay vs. Swagger. Not too shabby.

As far as I know, WWE confirmed that it maxes out at 720p on all devices. But, regardless, that's neither here nor there. Broadcast TV is no higher than 1080i regardless, so as long as you've got a great connection, you're viewing it almost exactly as it was shot and originally broadcast (if not better, because you're not getting the compression that cable TV suffers from.) But yeah, it looks pretty great.
I'd echo a lot of the other recommendations listed here - Royal Rumble 2008, Summerslam 2009, Money in the Bank 2011, Extreme Rules 2012, TLC 2012, Summerslam 2013, Elimination Chamber 2014 (when it's available.)
I'd also add Backlash 2009 to that list. Absolutely love that Cena/Edge Last Man Standing match. I usually hate that gimmick, because I find that the finish is always anticlimactic, but that match is awesome.
