I attended a college lecture from Edward James Olmos once and shook his hand after it was over. I also met Luol Deng randomly at the Taste of Chicago one year, when he was still a Bull. I don't know why but he followed me on Twitter. That is odd.

You were so young when you met Vince but I am sure if you were a little older you would approach him and open discussion on the matter of firing key essential writers especially one specifically in 2006 for Smackdown. There is plenty of room for debate wether the WWE should go after celebrity invitations to monday night raw or have quality matches with legends.
I only met one celebrity, Kevin O'leary from the Shark Tank and this was last year in Miami at a penthouse. I simply sent him a note card cause he had a table next to mine in the restourant. He came up to me and shook my hand and I told him I am a big fan and love his books.

Met Billy Bob Thornton when his band played in town. Their music kinda stunk but he was a cool dude nonetheless.

I met baseball hall of famer Ozzie Smith. He was part of our speaker series at the college, won VIP tickets to it. he was very kind and signed my photo and took a photo with me.
William Katt from the movies "House" and "Carrie" at the local comic con. was down to earth and a super cool guy.
various wrestlers from tna and wwe etc.
Eugene was probably he strangest. (2006ish) Eugene, Rosey, and Gene Snitsky were all traveling together. We saw them pull up in the parking lot. Eugene got out of the car, and when he saw us he slowly transformed into a intellectually- disabled person. he pulled his hair out of his ponytail, ruffled it up and acted like Eugene. he came over to us and signed out stuff and took photos. I was 15 at the time and my brother was 12, so I don't know if he did it because we were kids and he wanted to keep the gimmick alive to us, or what but he was a very cool guy.
Rosey was also very cool, I had the wearable mask that came with his figure and put it on, he signed it while i was wearing it. seemed like a jolly cool guy.
Bubba Ray Dudley was a complete bunghole at a TNA event
James storm was super cool, talked to him for a while before i got my program signed
Tara/Victoria is very nice and such a sweetheart

Ive net The undertaker numerous times as i live in austin and my ex worked at a dog ranch that watched his dogs when he and Sara were on leave. Sometimes he's amazingly friendly, sometimes he's standoffish.
Living in Austin, ive also met Steve Austin and Mark Henry numerous times. Austin is netorious for avoiding public swarms. Henry loves it and will sign everything. But often he's with his nephew so i try and leave him be.
We also get alot of Justin Long, Sandra Bullock, and Matthew Mconahe (sp?) here downtown. Justin long loves indy bands and is always at our music venues.
Our local indy fed ACW pulls people like Daphney, Blue Meanie, Stevie Ray, etc fairly often and current head trainer is Paul London.
Other than that its mostly NFL and NBA stars ive run into.

I met Gordon Ramsay at one of his gastropubs in LA once. Got a pic with him.
I train BJJ at the Gracie Academy in Torrance so I used to see Eve Torres a few times a week but now that she gave birth to her son a few weeks ago I don't see her as often. I also met Ed O'neill (Al Bundy) who is a black belt who trains there every once in a while. Also got a chance to meet Ronda Rousey who trains there on occasion when shes got a fight coming up. She was at the academy just yesterday actually. My friend works at the Beverley Hills branch for the Gracie Academy so he gets to meet more celebrities like CM Punk, Roy Hibbert, Kareem Abdul Jabaar, Sam Harris, one of the Wayans bros, etc.

I've never encountered anyone famous but a friend of mine once met Hugh Jackman at a store. Not kidding.

I met Busta Rhymes one time at a McDonalds in Uniondale, NY. He was a cool guy. Just said what's up and he replied back which was cool.
Met and got a autograph with Destiny Child. This was before they got big. I think they were doing a signing at Roosevelt Field Mall in NY but i was working the mall during that time and I was leaving late and I just saw them chilling in the back.
Me and the wife met Jeff Hardy at mall in North Carolina. We were at Champs and he walk in with his wife and kid. We just said hi and said we were fans. He was cool and ask if we wanted a pic.Especially he was with his family.

I'm a huge sports fanatic and the one that will always stand out is Jerry Rice. I admit I'm a huge Cowboys fan but he's the greates receiver that will ever play the game. I was lucky enough to get him to autograph a mini helmet.
