What exactly do the WWE producers such as Joey Mercury, Dean Malenko and John Laurinaitis do? I'm talking about the job description

I believe, primarily, they are responsible for going over segments with the wrestlers involved and providing them crucial details - the finish, the length of time, major points they need to hit, etc. If they are former workers themselves, they usually also have an input as to the story being told during the match. The producer usually works collaboratively with the two guys and gals (or more) involved in the match to ensure it comes off as smoothly as possible.
They report directly to Vince and creative, and in a way, serve as a mediator between management and the talent themselves. If the wrestlers "go rogue" during a match, the producer/agent is just as likely to be held accountable as the talent is.

They get key spots in the match hammered out with the wrestlers involved, figure out what the finish is going to be. Key moments and things of that sort and it's so they can relay it to the head producer to make sure the camera crews don't miss out on things that should be focused on. That is, to my understanding, what their main purpose is.

Don't forget about the part where he says that the ratings of your flagship television show that you build the basis of your entire company around are meaningless and their metrics are "archaic." Tell that to NBC Universal and see how far that gets you.
