In 2001 The Rock left to film The Mummy and The Scorpion King but what if it was 1 year earlier. Think about it in 2000 Austin was injured and Foley retired so what if The Rock left the night after WM 2000? He basically replaced Austin as number one face and with most other top guys heels how would they have booked the main event scene?
1998 started with the loss of Bret and Shawn but Mankind, Austin, Kane, Rock etc proved to be strong enough to keep the show going but 2000 would've been a worse care scenario with the top main event faces gone.

If there was ever a time that WWE could absorb a big name loss it was between 2000-2002. The talent was unbelievable at the time. Losing someone the caliber of The Rock would have been tough, but the company had the momentum as well as the roster to keep on trucking along.

Jericho would probably get pushed to the moon if Rock and Austin were not around. Kane and Taker would've been more prominent too.

You would have to think if Rock left right after Mania 2000, the next top face was Jericho. He probably would have been pushed right into a world title feud with HHH.
I feel Rikishi would have also been pushed to the moon, Big Show would have turned face (as he did) and stayed Face and Undertaker probably would have taken the title off HHH during the summer.
It would have definitely have been felt without rock but with the talent pool so strong they could have handled themselves fine at the time.

Rock was over but guys like Taker and Jericho were over big time as well in 2000. Im sure if Rock left after Mania, Jericho/Angle/Benoit all get pushed to the moon, Eddie/Rikishi get pushed up higher than they were, Taker/Trips/Kane/Big Show likely dominate the main event scene until Austin comes back in September.

Jericho was crazy over around WM2000. He had just found his groove in the WWF and the fans were getting behind him. He was always seen as "Rock-light" at the time due to their similar promo styles and insults, but had Rock left in 2000, I can see either Jericho stepping into his role or HHH remaining a face in late 2000 instead of being revealed as the guy who ran over Austin.
Taker likely would have had a brief title run as well at some point in 2000/2001.
