I know the kayfabe reason was something about not having valid contracts; but what was the real reason V.K. Wallstreet and Big Bubba were removed from the NWO so early on?

Wallstreet was never removed. He ended up going to Japan and wrestling there for the NWO Japan group they had happening.
As for Bubba, I am not sure what they were doing with that. They turned him face, put him with The Steiners and then months later he was in the WWE as a heel and was helping out McMahon.

Honestly, as an actual wrestler, WWF/E was where Boss Man always shined. When he started out as Bubba, and was just simply Cornette's bodyguard, they did it right, but as a wrestler, he was always done best in Vince's hands. Of course it didn't help that he switched characters three times, in less than 2 years at the start of his WCW run. As for the original topic here, I think with some guys that were in the nWo, they were throwing stuff against the wall to see if it would stick. And for the WCW version of the group, Wallstreet and Bubba just didn't stick, so they sent Wallstreet to Japan and turned Bubba face.
