Well if you plan on watching any live content, its espn+. They've pretty much killed the fun with that.
For a selection of past stuff, its fight pass.
There are other options too. But I cannot suggest or discuss them here.

You need an ESPN+ subscription now in order to get their PPVs.

Does Fight Pass add all PPV’s to their archives eventually? I'm not sure anymore. This espn deal has been a nightmare.

Yep, ESPN+ is pretty much where you have to go for anything live now. Kind of sucks because it wasn’t always like that. For older fights, Fight Pass has a good library, but it’s not as exciting as catching things live. There are other ways to watch, but you didn’t hear that from me.
