I might say 1985. WWF exploded in popularity and started the transition from the Backlund-era where there was still the pretense of it being a legitimate sport with some characters sprinkled in to a spectacle with everyone being a character. Savage, Hart Foundation and Bulldogs were getting started in the WWF (Stampede guys might've been there a little earlier but I think those teams started up in 85) and were really exciting to watch. And the first Wrestlemania of course, in retrospect not their greatest show but the hype around it was just incredible. I'd probably take any year from 84-90. My pick is 1985 as well. Everything from the WWF to the NWA and WCCW etc, was just amazing. Roddy being the best heel in the business, Hogan working against good talent, Flair being Flair. Hell, I was watching Hillbilly Jim stuff from 85 just a couple of says ago just to get my 1985 fix.

If I could only watch one year I’d be cool with watching 97. Right now I am re-watching the Monday Night Wars. So far I’m up to Oct 97 and I’ve got to say that 97 is just an amazing year for wrestling! I mean on the WCW side the nWo is at its height, they have Macho/DDP feud, & Hogan/Sting feud. And on the WWF side they have the start of the attitude era, the rise of Austin and DX, the Hart Foundation vs USA angle, and the birth of Mr. McMahon. This year really laid the groundwork for the evolution of the industry. It’s been really cool to see how the WWF evolved into the attitude era with Raw is War. I can’t wait to see the WWF really take off in 98!

For me it's two options.
1997 WWF Raw is extremely enjoyable storytelling. Even if the matches suffer in quality a bit, the total package is incredible. 1997 Bret Hart is my favorite thing ever in wrestling.
1992 WCW is top notch pro wrestling. A bit of a strange time as there is no Hogan and no Flair. Bill Watts, Rick Rude, Steve Austin, Vader, Sting, Steamboat, Cactus Jack, Ron Simmonds all made for an enjoyable roster that feels somewhat underground compared to what was going on elsewhere.
Either of these two years would be a pleasure to watch over and over.

Absolutely 1988. This is the year that I was in attendance for my first live show and became a rabid wrestling fan.
1987 is a close second. I became enthralled by the Savage/HTM feud, and upgraded from a casual (but not yet rabid) fan. The '88 live show sent me over the top.

I’d say 98. Besides the top guys in the WWF at time, I really enjoyed the mid carders. Most of what I watched from 98 was taped episodes of Raw.
