Longest ones i can think of:
- The Rock 2004 - 2011
- Bret Hart 2000 - 2010
Bruno Sammartino had took a lot of years off before returning didn't he?

The Rock’s first match back was at Survivor Series 2011. Brock Lesnar had an 8 year gap in WWE from WrestleMania XX to Extreme Rules 2012. Brock wrestle in Japan during that gap before the MMA fighting. I know, hence why I stated “in WWE” in my sentence.

I can think of 3 cases of the top of my head
Goldberg's last match was at WM 20 Vs Lesnar in 2004, then he left and returned to wrestle Lesnar again at SS 2016, he never wrestled in between the Lesnar matches. 12.5 Years
Ultimate Warrior last wrestled Hogan in WCW Halloween Havoc 98, returned for one last match in the summer of 2008 vs Orlando Jordan in Spain. 10 Years
Ricky Steamboat retired from injury in 1994, returned at WM 25 vs Jericho in 2009 14 years
