A few days ago I asked why (in kayfabe) wrestler's weights don't change like how they do IRL. Well now we're onto the bigger question. How (once again, in kayfabe) can a wrestler's billed height change?
List of examples: The Giant was 7'4" in WCW, 7'2" in the first few years of his WWF/E run, then went down to 7'0". Sheamus was billed at 6'6" from his WWE debut until about 2011 when they changed it to 6'4". Mean Mark Callous was 6'9" but The Undertaker is 6'10 1/2" (side note: I always thought it was weird how they gave Taker the 1/2" in his billed height but nobody else ever). Randy Orton and Edge have both floated between 6'4" and 6'5" in their careers. Brock Lesnar and Goldberg have both been billed at 6'3" and 6'4" at different times. What is the kayfabe explanation of this and can y'all think of more examples of a wrestler's billed height changing? Any other topics y'all wanna suggest?

In the case of WCW heights compared to WWF heights, WWF treats(ed) WCW as it didnt exist so they didnt care.
I never understood why they would bill someone at a height that they're clearly not. I have a 6'5'' friend who is just an inch or two shorter than Kane...which means Kane and taker arent the 6'10" guys they say they are but more 6'7''....Marty Jannetty is billed at 5'11'' and he's a solid 3-4 inches shorter than me.

Guys getting smaller makes perfect sense. People get smaller as they age. Especially, when wrestlers experience a great deal of spinal compression. Also, treatment of that spinal compression can make you slightly taller as you are able to elongate the spine.
In most cases though, the it’s probably just a matter of how WWE wants them to be perceived against the rest of the roster. If they want someone to seem massive, they’ll bill them taller. If they want them to be more comparable with the people their up against, the bigger guys will be billed closer to real height and smaller guys will be billed taller.
I remember years ago on one of those Legends Roundtable episodes, one of the legends said 6’0”-6’2” was the perfect height for a champion, because they didn’t look too dominant against smaller guys, but they also looked like they had a shot against big guys.

Angle shrunk a fair bit over the years. Makes sense due to all them injuries. So did Hogan, but honestly I'm not even counting legit shrinking as examples for this.

I actually noticed that as a casual wrestling fan nowadays (grew up watching the mid 90's - 0/3/04). I watched a recent video of Kane where he was the same size he always was, he definitely packed on a few in the later years though.
I always thought it was what it was. They probably never really change. I also figure it's like sports, they list them taller to give off the illusion that they're bigger, stronger, more intimidating. The NBA started measuring players with and without shoes though. If Kane was 6"7 no shoes, he could have been 6"9-10 in wrestling boots.

Guys getting shorter as they age that's a legit thing, the spine compresses and knee ops etc both can alter a person's height.
As for guys getting taller? From a kayfabe stand point I can only assume that they're measured fully clothed and different footwear changes their height slightly.

Wrestlers have different pairs of boots to meet regulatory heights for specific state guidelines.
These threads remind me of the time in WWF Magazine when Shawn Michaels and Alundra Blayze had a recurring article together called "The Love Lorn" that was mostly Q&A. A fan asked HBK why he tapes his wrists, to which he said "so I don't hurt myself when punching fools like you". Made me lol.

I remember before he tore his bicep in 2002 that Kane/Glen Jacobs use to wear lifts in his boots. When he returned in 2002 he didn’t wear them (or atleast not as high as they were before), and Goldust was nearly the same height as him (Dustin was always promoted as 6’6” to 6’7”).

Kane is pretty much the exact same as test here. Test was 6'6 However in older videos kane is atleast 2 inches taller. When he came back in 2002 he must have changed boots and dropped the lifts. *Edit Here in 1999 Hes the same size as test as well 1998 he looks taller than test he must have dropped the lifts sometime after this here is kane with imposter kane Luke gallows. Gallows listed as 6'8 and is taller than Kane, again putting him at 6'6/6'7 Attachment Deleted

Daniel Bryan is billed at 5'10" but when I met him we were the same height eye to eye and I'm like 5'6-7"
