There’s some inaccurate stuff here

Series 1 Jericho is not based on All Out 2019 and his packaging date is correct, it’s based on Double or Nothing 2019, he wore a different jacket with red designs at All Out. However the Bubbly Jericho is based on All Out

Series 2 Dustin is more accurate to DoN 2019 than the date they gave his box, he comes with no jacket (accurate to DoN) and he wore a jacket on that Dynamite

People can keep saying Darby Allin is based on Fyter Fest 2019 until they turn blue and that’s the date on his box but the jacket is different and he never used that skateboard in 2019 (not sure if he’s ever had a deck with that design honestly). That’s why I’m leaving his attire date in the stickied checklist as unknown until it be confirmed when it was worn

Generally speaking I'm going with what the box says, unless it's obviously way off (like Chase Jericho). There are bound to be some inaccuracies between the figures and what was actually worn, but generally speaking as long as the attire is trying to depict the date on the package, that's what it should be considered.

Here's another one you missed. The Chase MJF includes the Shop AEW scarf they sell as merch, but I believe he wore his regular scarf at Fyter Fest 2019.

Cassidy wears the same stuff all the time, just varying up the shirt under his jacket. He wore that exact attire at Double or Nothing 2019, I think they just changed the packaging date and photo to create the illusion it’s more recent. Same with the Bucks having a Dynamite as the ring date but the first time they wear the Golden Elite gear was All In 2018

Not necessarily. Even if they had the rights they would probably have chosen the Dynamite from 2020 because people complain about figures being outdated and that would help these figures to feel more recent. I think AEW will probably but the rights eventually if they don’t own it; Jericho as Pentagón would be a great exclusive or chase and the attire Cody wore on that show was clean af

Updated again after all the pics were shown off today. Back of box pics for Unrivaled 4 Kenny Omega, Sammy Guevara, and Ortiz are still needed (and Santana technically, since the only pic so far was leaked, not official). I also still haven't seen the back of Chase Riho's box if anybody has a pic of that.

Edit: Back of Sammy's box is on Ringside's listing for the figure so I'm adding that now.

Added Unrivaled 5 now that the lineup has been officially revealed. Luchasaurus is the only known date (due to a leaked photo) and all figure numbers are TBD.

I actually did go through early Darby matches and tried to pinpoint this look. Here's what I think happened...

I believe this figure is intended to depict Darby from Fyter Fest 2019 as advertised. However, the markings on the toy jacket don't exactly match the markings on the real jacket. The heart is there on the back of both, but there are several more markings on the toy than there are on the real jacket. (Maybe since Fyter Fest 2019, Darby has painted the jacket more, and he provided reference pics for them, and nobody realized it had been modified since then... but that's just me guessing.)

Also, Darby was not yet skating to the ring at this point. It would have been more accurate for him to come with a body bag that said "CODY" on it. I think they wanted to depict Darby's first AEW match but the skateboard has become such a big part of his character since then that they included it in spite of not being 100% accurate. (I also have not pinpointed if/when he used this particular deck.)

But aside from the jacket and the skateboard, the figure is accurate to Fyter Fest 2019. His boots, shorts with leggings under, the tattoos and face paint... They're all accurate to that show. Then the jacket is nearly accurate but includes too much deco, and the skateboard is an added (but technically inaccurate) bonus item. I'm not positive but I think by the time he started riding a skateboard he already had more tattoo covering his arm, which this figure doesn't have.

So I know you probably don't want to hear it, but I believe Fyter Fest 2019 is exactly what they were going for with this figure.
