WrestleMania 30 needed one with proper furry boots or the eco-champion in blue and green, but with mattel/wwe, you get what you get. Funny there's no AJ Styles yet either, it seems like Mattel's banking on legends more and more lately

I'll say Yes.
A WrestleMania 30, 31, or 2021 Daniel Bryan would have made a great Ultimate Edition.
Personally, i think their biggest missed opportunity with Bryan was the 2015 long hair look, one of my favourite looks of his.

It definitely would have been nice but it's not a huge loss. I think they could have included three different heads to capture different eras and a regular and eco title with a shirt.

Yes -- could have done 3 heads for 3 different eras. But also 100% not Mattel's fault -- there's no one he should have been ahead of, except maybe the re-release Rock. But he's the Rock.
