DX:IYH Shawn Michaels and the Elite Exclusive Liv Morgan. Both of these I could have gotten for reasonable prices at one point, with HBK being on Ringside and I saw Liv a couple times for only about 50 (which I would have paid). However, I wasn't hardcore into collecting the Mattel line until later and ended up having to settle for the basic Riott Squad Liv and my custom HBK.
I don't mind either, honestly, and my custom HBK is probably my favorite figure I own. But not having my DX HBK be in green and black trips up my OCD a bit so I don't display him with the rest of the group. It works, he wasn't in that lineup of DX anyway. And as for the Liv, the only Sarah we ever got was a basic and the only Squad Ruby we got was a basic so I'm fine with her being a basic to match.
I'm probably BSing myself into acceptance at this point, but it is what it is.

I have a small Elite collection of CM Punk, but I'm missing a few of his releases. The RSC Exclusive SES Punk would be my biggest regret. I didn't have the money available at the time, and haven't been one to hunt things down on the secondary market.
Also missing Elite 1, Elite 20, The ECW Ringside Exclusive, and the two BAF PPV releases.
Others that come to mind:
Elite 13 Edge/ Elite 20 Christian.
Elite 18 Undertaker.

The Von Erichs for me
I took off collecting for a couple years after Jakks left and Mattel took over. Didn't even pay attention to what they were making honestly. By the time I realized they made the Von Erichs, it was too late. Other guys they have released a second time so it didn't bother me much. But I doubt they release them again.

I started collecting in 2013 and I refused to spend money on Matty Tully Blanchard even though I needed him at the time. Eventually, I got what I wanted by 2017.
Unfortunately, my house burned down and I lost it all.
After that traumatic experience I started to rebuild my collection, but a lot of figures I had skyrocketed in price and I could not afford them.
At this time there are so many figures I purposely had to miss and I just have to move on. If any figures I desire right now that I missed - it would probably be Ultimate Edition The Rock (amazon) and Ultimate Edition Ultimate Warrior (Halloween Havoc)

I found a Diesel at Sears and a MITB CM Punk at WallyWorld, but I never saw red Kevin Nash in the wild.
Never saw WCW UE Warrior in stores. Never saw it in stock online besides $24.99 on Walmart. Someone had to blab about it on Twitter and it was gone. 😑

I keep dreaming that I wake up and my place is on fire.
It's been a recurring nightmare ever since I woke up one night and smelled smoke because the *neighbor's* place was on fire. Apparently he pounded on my door to wake me up but I was too groggy to comprehend what was going on and fell back to sleep. The next morning, his place was completely gutted and everything in my apartment smelled like smoke. Plus, my car had a ton of tiny burn marks from where the embers had landed. I had to stay with my boyfriend for two weeks while I scrubbed and washed everything.
I've had the nightmares ever since.

None.......truly can say I got every figure I was ever looking for. Sometime it took a long time to find like Harley Race or Texas Tornado, other times it was a lucky find like Chase Steelers Britt Baker!
