I voted for Trish, but I would switch that to Bianca if I knew that Mattel was going to give her a more appropriate body sculpt this time. Her elites were way too skinny.

I want a freaking Asuka robe! I would’ve been happy for a plastic one at this point. Other than that, maybe a Miss Elizabeth with multiple dresses. The female Ultimates do not appeal to me so far, but I’d buy them based on the accessories they come with.

Personally, I'd love to see an Ultimate Asuka because they'd actually be able to do it with a soft goods robe and all. However, with her current position in the company and how she's been booked over the last couple of years I wouldn't hold my breath expecting one.
So, I chose Trish at this point. She's a HOFer, one of the most important women to ever work for the company, and they haven't released a lot of figures of her up to this point.

It should absolutely be Luna Vachon. UE level of attire detail with alternate heads is exactly what that figure needs.
Even better, put her in a wave with UE Wrestlemania 10 Bam Bam Bigelow.
